Ingredients for Fried Mackerel with Fish Sauce Serves 2 – 3 people

Mackerel 3 slices (about 300g) Chili 4 pieces Garlic 3 cloves Cooking oil 120 ml Fish sauce 1/3 cup (rice bowl) Common seasonings A little (Sugar/ salt/ monosodium glutamate)

How to choose fresh and delicious mackerel

  • You should choose mackerel with bright, clear eyes, slightly bulging, and gills that are bright red and firmly attached to the fish body as these are usually fresh and of good quality.
  • When selecting mackerel, you need to carefully observe the belly of the fish because fresh fish will typically have a flat, sunken belly and the anus will still be retracted inwards.
  • Additionally, you can gently press the belly to check the elasticity of the fish meat; if the meat does not deform when pressed, it is a standard mackerel.
  • You should not choose fish with cloudy eyes, slightly sunken, large eye sockets as these are signs that the fish has been refrigerated for many days or has dark red gills that are easily detached and fall off.

  • Prepare the mackerel

    When purchasing whole mackerel, you will use a scissors or a knife to cut off the fins on both sides and completely remove the internal organs.

    Then, to reduce the fishy smell, you will wash the fish with dilute salt water and then rinse with clean water and place it in a colander to drain. Finally, cut the mackerel into bite-sized pieces about the thickness of one finger!

    Garlic you buy will be peeled clean of the outer skin. Chili peppers are removed from the stem, then washed clean and drained.
