  • Additionally, you should choose leaves that are intact, not too torn or showing tiny spots due to pest damage.
  • Avoid buying betel leaves that are too dark green, and feel dry and hard to the touch, as these are old leaves that will not taste good.

How to prepare Stir-fried Frog with Pepper Leaves

  • Prepare the ingredients

    First, with 500g of frog bought, you need to skin it, while also removing any residual blood and intestines.

    Next, take some salt and rub it all over the frog meat for 3 – 5 minutes, then rinse it several times with clean water, drain, and use scissors to cut it into bite-sized pieces.

    Tips for cleaning frogs thoroughly and without a fishy smell

    • Method 1: The simplest way is to wash the frog with salt for a few minutes.
    • Method 2: Alternatively, you can use a mixture of alcohol and ginger to wash the frog for about 3 – 5 minutes.
    • Method 3: Additionally, you can clean the frog thoroughly, then blanch it briefly with alcohol, ginger, and turmeric powder for 3 – 5 minutes!

    Remove any damaged or wilted leaves from the pepper leaves, then wash them 1 – 2 times in water until clean, drain, and use a knife to cut them into thin strips.

    Finally, peel the shallots and chop them finely.

    You put all the prepared frog into a bowl along with 1 teaspoon of salt, 1 teaspoon of turmeric powder, and half of the minced shallots.

    Then, you use chopsticks to mix well and let the frog absorb the spices for about 30 minutes.

  • Fry the frog

    First, you need to preheat the air fryer at 180 degrees Celsius for 10 minutes.

    Then, you place a sheet of aluminum foil in the pot, and gradually add the marinated frog, close the lid, and fry at 200 degrees Celsius for about 10 minutes.

    Next, you use chopsticks to turn the frog to the other side, continue frying at 200 degrees Celsius for another 5 minutes. Finally, when the frog is golden brown on both sides, you turn off the pot and place the frog on a plate.

    Tip:

    • To prevent the frog from burning and ensure it turns golden evenly, you should fry on low heat and turn the frog frequently.
    • If you don’t have an air fryer, you can substitute with a non-stick pan to fry the frog!

    After frying the frog, you put a pan on the stove with 2 tablespoons of cooking oil heated over medium heat. When the oil is bubbling, add the remaining shallots to sauté until fragrant.

    Then, add all the fried frog into the pan and stir-fry for about 3 – 5 minutes. Next, continue to add 100g of chopped betel leaves, 1 tablespoon of fish sauce, and 1 teaspoon of ground pepper to stir-fry for 1 – 2 minutes.

    When the ingredients are cooked and tender, season to taste, then turn off the heat and serve on a plate to enjoy!
