Quails 8 birds Fish sauce 1 cup Sugar 1 cup Chili sauce 1/2 cup Chili powder 2 tablespoons Shrimp paste color 1 tube Lemongrass 1 stalk Butter 20 g Garlic 10 g Ginger 1 piece

How to make Butter-Fried Quail with Fish Sauce

  • Prepare the ingredients

    Wash the quails thoroughly with water and let them drain. Place the quails in a pot to boil with sliced ginger and chopped lemongrass, remember to add a little shrimp paste color into the pot to make the quails look more beautiful.

    Boil for about 10 minutes until cooked, then remove and rinse with cold water and let them drain.

  • Cooking the quail

    Next, you place a pan on the stove, turn on medium heat, and add 20g of butter to the pan. When the butter melts, add 10g of minced garlic and sauté until fragrant. Then add the quail and stir until the quail is golden brown, then turn off the heat.

    Place a pan on the stove, add 1 cup of fish sauce, 1 cup of sugar, 1/2 cup of chili sauce, and 2 tablespoons of chili powder. Keep the heat medium and stir the mixture to combine, then let the sauce cool.

    After that, add the prepared sauce mixture to the pan with the butter-fried garlic quail and stir on low heat for 10 – 15 minutes to let it soak in, then turn off the heat.

    Tip: Remember to stir quickly so the quail doesn’t burn!

How to choose fresh and delicious quail

  • Choose quail with light pink skin, bright color, and a natural fragrant smell without any foul odor.
  • Choose quail with a large breast, thick back, thick, plump, shiny belly skin, and feels heavy when picked up.
  • Do not buy quail with dark skin, prominent blood streaks, non-elastic meat, slimy texture, or meat that is pale green or darkened.
