How to choose fresh carrots
- Good carrots have a bright color, straight shape, medium-sized, smooth skin, and feel firm and heavy when held.
- Do not buy bruised, deformed, or wilted carrots. Avoid choosing overly large carrots as they will have more fibers and bland taste.
How to choose delicious shiitake mushrooms
- Delicious shiitake mushrooms will have a moderate size, not too big and not too small.
- Good mushrooms usually have tightly curled caps, with a natural golden-brown color that is not too dark.
How to choose fresh and delicious bell peppers
- To choose good bell peppers, you should select those with a shiny, smooth, thick skin, still having the stem tightly attached, feel heavy in hand, and have bright colors. These will be fresh and nutritious bell peppers.
- Do not choose soft, mushy bell peppers, with blemishes, dull colors, and cracks, as these are spoiled and lack nutrients.
How to prepare Vegetarian Fried Rice with Mixed Ingredients

Prepare the ingredients
Peel the carrot. Cut off the stems of shiitake mushrooms and chicken mushrooms. Soak the carrot, shiitake mushrooms, and chicken mushrooms in diluted salt water for about 15 minutes, then rinse thoroughly with water, drain, and chop finely.
Soak the preserved radish in water for about 5 – 10 minutes, then rinse thoroughly with cold water, drain, and chop finely.
Wash the tofu with water, then dice it.
Prepare the bean curd skin by cleaning it and chopping it into small pieces. Dice the green bell pepper and red bell pepper.

Sauté the ingredients
Place a pan on the stove, add 1 tablespoon of cooking oil and wait for it to heat up. Add the shiitake mushrooms, chicken thigh mushrooms, vegetarian tofu skin, and cabbage to the pan and sauté over medium heat for about 2 minutes until the ingredients are just cooked. Lower the heat and season the pan with 1 tablespoon of seasoning and 1 tablespoon of sugar, then stir well.
Turn the heat back to medium and add the white tofu and carrot, stirring evenly for another 2 minutes until the carrot and tofu are fully cooked.
Tip: If you don’t like tofu, you can replace it with vegetarian sausage instead.

Fry the rice
Lower the heat and add the rice to the pan, drizzle 1 tablespoon of cooking oil over the rice, then turn off the heat, and add 2 tablespoons of soy sauce and 1 tablespoon of oyster sauce to the pan. Use a spatula and chopsticks to mix well so that the seasonings are evenly absorbed and the rice grains are fluffy.
Tip: Drizzling oil over the rice helps it become fluffy, shiny, and visually appealing.
When the rice is fluffy, turn the heat back on and fry the rice over high heat for about 3 minutes before turning off the heat.

Final product
Put the rice into the mold to shape it and then arrange it on a plate, sprinkle diced bell peppers around, and add some decoration for a beautiful finish.
The fluffy rice and sweet vegetables will provide you with enough energy for a whole day of work. Eating it with soy sauce and sliced chili will be very delicious!
Tips for successful execution:
- It is recommended to use leftover rice for better frying. If you use freshly cooked rice, you should spread it out in a basket to let the steam escape quickly, and once it cools down a bit, start frying the rice, or place it in the refrigerator for about 2 hours for fluffier and tastier fried rice
- Do not use too much oil when frying rice as it will make the fried rice greasy, unappetizing, and hard to digest.
