  • When buying tiger shrimp, you should choose those with a clear outer shell and a smell that is characteristic of the sea, not fishy or unpleasant.
  • Fresh shrimp will usually have the head, body, and legs firmly connected. The joints on the shrimp shell move flexibly.
  • Avoid choosing shrimp with legs spread out or an unusually plump body, as this is a sign that the shrimp has been injected with chemicals or water to increase weight.

How to make Garlic Butter Shrimp

  • Prepare the shrimp

    When you buy shrimp, you just need to keep them whole, then wash them thoroughly with water and let them drain.

    After the shrimp has drained, place a pan on the stove, add 100ml of cooking oil to the pan, heat it on low until the oil is hot, then add the shrimp.

    Fry over medium heat for about 3 minutes until the shrimp firm up, then turn off the heat and transfer the shrimp to a plate to drain the oil.

    Note: Do not fry the shrimp too much, as this will make the shrimp meat dry.

  • Make the sauce

    Add 1 tablespoon of warm water, 2 teaspoons of fish sauce, 4 teaspoons of sugar, 2 teaspoons of seasoning powder, 1 teaspoon of monosodium glutamate, 3 teaspoons of shrimp sate, and 1/2 teaspoon of chili powder into a bowl.

    Then, use a spoon to stir well until the mixture is completely dissolved.

    Place a new pan on the gas stove, then add 2 tablespoons of Tường An butter and heat over medium heat until the butter is completely melted, then add minced garlic.

    Sauté until the garlic becomes fragrant, then add the pre-mixed sauce and continue to stir over high heat for about 3 minutes until the mixture thickens slightly.

    Add the fried onions and shrimp and sauté evenly for about 7 minutes over low heat, then turn off the heat. Finally, scoop the shrimp onto a plate, sprinkle with some chopped green onions on top for garnish, and it’s ready to enjoy!

How to quickly remove shrimp threads

  • Method 1: Count backwards from the tail of the shrimp to the second groove between the two segments of the shrimp shell, then pierce a toothpick through this position and gently pull the shrimp’s dorsal thread out.
  • Method 2: Use a toothpick to dig out the head of the shrimp to find the black thread, then gently pull this black thread out, and the shrimp will be clean.
  • Method 3: Turn the shrimp over, use one hand to hold the body of the shrimp, and with the other hand peel back the sides of the shrimp head, then firmly hold the connection between the head and body of the shrimp, and slowly separate the head from the body. At this point, the shrimp thread is attached to the waste at the head of the shrimp, so it will be pulled out along with it.
