  • It is advisable to choose scallions of moderate size, not too big or too small, as this will ensure the best flavor.
  • Prioritize buying fresh green scallions, dry, with a firm stem that is not soft and mushy.
  • Avoid purchasing scallions that are rotten, excessively scratched, or bruised.

How to cook Stir-fried squid with scallions

  • Prepare and marinate the squid

    After buying the squid, remove all the hard sacs, eyes, intestines, and the black bag, then wash thoroughly.

    Next, turn the white part of the squid body inside out and cut it into squares, then chop into bite-sized pieces. Cut the squid head in half or into thirds.

    Marinate the squid with 1 tablespoon of satay, 1 tablespoon of sugar, and 1 tablespoon of monosodium glutamate, mix well, and let sit for 15 minutes to allow the squid to absorb the seasonings.

    Tips for properly cleaning squid
    • Method 1: After removing all the intestines and black bag, soak the squid in water mixed with white wine for about 5 – 10 minutes, then rinse with clean water and let drain.
    • Method 2: You can use vinegar to rub the entire squid body for 3 – 5 minutes and then rinse thoroughly, which effectively eliminates the fishy smell and makes the squid cleaner.
    • You can choose to remove the squid’s beak or not, as many families enjoy eating the squid’s beak, so you can choose to leave it.
