- Soak the oyster mushrooms in a concentrated saltwater solution (the ratio is 4 tablespoons of salt to 2 liters of water) for about 20 minutes.
- Next, remove the mushrooms and rinse them in diluted saltwater (the ratio is 2 tablespoons of salt to 4 liters of water), then squeeze out the water. Thanks to the salt, the oyster mushrooms will be firmer and crunchier when cooked.
- Finally, just rinse them with clean water.
