How to choose fresh, delicious lotus seeds
- To ensure freshness, you should buy unpeeled lotus seeds.
- You should choose mature lotus seeds, which are round in shape, with an off-white or deep yellow color. Mature lotus seeds will have a better taste when cooked than young ones.
- To buy the freshest and highest quality lotus seeds, you should purchase them from lotus ponds. At that time, the lotus pods have just been harvested, and you can freely choose.

How to Prepare Golden Lotus Tea

Boil Lotus Seeds and Water Chestnuts
Fresh lotus seeds are washed with water, then the lotus hearts are removed.
Then place the lotus seeds in a pot and add 500ml of water, 1 teaspoon of salt, boil over medium heat for about 20 minutes until the lotus seeds are cooked.
Next, add the diced water chestnuts to the pot of lotus seeds, add 100g of sugar and cook for another 5 minutes before turning off the heat.

Cook Sugar Syrup
Add 150ml of water and 300g of sugar into a pot, place the pot on the stove over medium heat. While cooking, stir well until the sugar is fully dissolved, then turn off the heat and let it cool.

Steep Tea
Put 1 bag of oolong tea into a cup and quickly rinse the tea with boiling water, discarding the first water. Next, add 200ml of boiling water and steep the tea for about 10 minutes. Then remove the tea bag.
Tip: Do not steep the tea for too long, as it will make the tea bitter and astringent. -
Whip the cream layer
Put 200ml of heavy cream, 100ml of unsweetened fresh milk, and 1 teaspoon of salt into a bowl. Use a hand mixer to beat the mixture at medium speed until it reaches a smooth consistency.
Tip:
- You should whip the cream in one direction to avoid bubbles that can cause the cream to separate.
- When whipping the cream, do not whip it until it becomes stiff; just whip until the foam thickens.

Using a tall glass, gradually pour 30ml of syrup, then add 1 tablespoon of lotus seeds and water chestnuts. Next, pour in 200ml of tea and add a few ice cubes. Finally, add the cream layer on top to complete.
