Chop the grapefruit peel and separate the grapefruit segments
To easily peel, cut off the cap of the grapefruit stalk, then make a vertical cut along the body of the fruit about every 2 – 3 finger joints.
Use your hands to peel off the skin. For the peel, cut away the white pith and keep the grapefruit peel. You can use this pith to cook grapefruit sweet soup. For the segments inside, separate the fruit flesh.
Cut the grapefruit peel into strips and soak the grapefruit peel in a diluted saltwater solution for 30 minutes, then remove and let it drain.

Grapefruit simmered with rock sugar
