  • You can choose any color of roses that you like, even using dried roses instead of fresh ones is fine.

  • It is recommended to choose cardamom in powder form rather than whole seeds, which helps to make rose syrup faster.
  • Pay attention to the origin and expiration date of the cardamom, as fresh cardamom will have a more fragrant and intense flavor compared to cardamom that has been stored for a long time.

How to make rose syrup using fresh roses

  • Prepare the roses

    First, pluck the rose petals from the flower and place them in a basin of clean water. Then, rinse the rose petals with water about 2 times, being careful not to bruise the petals! Finally, lift the petals out with a basket to let the excess water drain off.

    Place a pot on the stove, add 480ml of clean water to boil over high heat. Next, add all the rose petals (washed clean) into the pot, stir well with a spoon, and cook over medium heat until the color of the rose petals fades (about 10 – 15 minutes).

    Turn off the heat, leave the pot on the stove for another 2 – 3 minutes, then use a strainer to remove the rose petals from the pot, pressing firmly to extract the remaining essential oil from the rose petal residue.

  • Cook the mixture of rose syrup

    You keep the pot of rose water on the stove and continue to add 300g rock sugar. Cook over medium heat until the sugar dissolves (about 20 minutes).

    Next, reduce the heat to low and cook until the rose syrup thickens to your desired consistency.

    Finally, add 1/2 teaspoon of white cardamom powder, stir well, and turn off the heat.

    Rose syrup has a bright red color and a light sweet taste thanks to the use of rock sugar and a moderate thickness. When tasting rose syrup, you can also feel the faint aroma from cardamom.

  • Cook the sugar water

    Put a pot on the stove, add 250ml of filtered water and 250g of granulated sugar, stir well to dissolve the sugar completely into the water. Wait for this mixture to boil, then adjust the heat to medium and cook for another 5 minutes.

  • Making rose syrup

    After 5 minutes, add 25g of dried rose petals and cook for about 10 minutes. When the mixture boils vigorously, add 2 drops of pink food coloring and 1/2 teaspoon of rose essential oil. Continue to simmer for about 4 more minutes until the mixture thickens, then turn off the heat.

    Strain this mixture through a sieve to remove the dried rose petals. Wait for the syrup to cool, then pour it into a bottle. It can be stored at room temperature or in the refrigerator!
