Ingredients for Green Bean Cake For 6 people

Glutinous rice flour 400 gr Peeled green beans 50 gr Peanuts 10 gr (roasted) Grilled rice paper A little (bánh đa) Shallots 3 bulbs Spring onions 2 stalks Warm water 300 ml (70 degrees C) Common spices A little (sugar/ salt/ monosodium glutamate/ seasoning/ ground pepper) Fish sauce 1 tablespoon Cooking oil A little

How to make Green Bean Cake

  • Make Green Bean Filling

    First, wash the green beans thoroughly and soak them in warm water for about 30 minutes to soften them.

    Next, place the green beans in a steamer and steam for 20 – 30 minutes. After that, transfer the beans to a bowl and mash them with a spoon.

    Tip:

    • If you don’t have a steamer, you can steam the green beans using a rice cooker.
    • If you want to eat whole green beans, you don’t need to mash them completely.

    Divide the mashed green beans into 2 parts, one for sweet filling and one for savory filling.

    For the sweet filling:

    Heat a pan, add 25g of green beans, 2 teaspoons of sugar, and stir-fry the mixture over low heat for about 10 minutes.

    After 10 minutes, add 1 teaspoon of cooking oil and continue to stir-fry until the filling is sticky and smooth, forming a mass that does not stick to your hands.

    For the savory filling:

    Heat a new pan over low heat, add 1 teaspoon of cooking oil, then add the remaining green beans to stir-fry. Season with 1/2 teaspoon of seasoning powder, 1/2 teaspoon of sugar, and 1/2 teaspoon of monosodium glutamate.

    Stir the mixture evenly so that the seasoning is absorbed, taste again for seasoning, and finally sprinkle a little ground pepper before turning off the heat.

    Tip:

    • You can adjust the amount of sugar according to your preference for sweetness!
    • To avoid burning the filling, remember to stir-fry evenly and quickly.

  • Mixing the cake flour

    Put 400g of glutinous rice flour into a bowl, then gradually pour in 300ml of warm water at 70 degrees Celsius, while pouring and kneading until the dough is smooth and elastic, let the dough rest for 15 minutes.

    Tip:

    • To avoid the dough becoming too wet, you should gradually add water to the flour, avoiding pouring it all at once.
    • Depending on whether the flour is old or new, the amount of water needed will vary; if the dough is dry, add more water and continue kneading.

  • Shaping and steaming the cake

    Divide the dough into several small portions and roll them into balls. Next, use your hand to flatten each ball of dough, place 1 teaspoon of filling in the center, gather the edges of the dough, and shape it into a round form to finish.

    Then, arrange the shaped cakes onto a plate or banana leaf that has been greased with a layer of cooking oil.

    Tip: You can shape the cakes larger or smaller depending on your preference. To prevent the cakes from sticking to your hands and the utensils, you should evenly coat your hands with cooking oil during the cake-making process.

    Place the plate of cakes into the steamer, put the steamer over a pot of boiling water, cover it tightly, and steam the cakes for 7 – 10 minutes until cooked.

  • Making the oil sauce

    Chop the green onions finely and place them in a separate bowl, then slice the red onions thinly.

    Heat a pan on the stove, add 150ml of cooking oil and heat it, then add the sliced red onions and sauté until golden and fragrant over medium heat.

    Next, pour the hot red onion mixture into the bowl with the green onions and mix well.

    Continue to add 1 tablespoon of fish sauce, 1.5 tablespoons of sugar, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of seasoning powder to the pan. Stir well over medium heat for about 2 minutes, then taste and adjust the seasoning so that the mixture has a balanced salty and sweet flavor before turning off the heat.

    Finally, pour the seasoning mixture into the bowl with the onions and mix well to complete.

    When eating, simply pour the oil sauce over the cake, sprinkle with peanuts, and enjoy with grilled rice paper.

    The green bean cake is soft and chewy, with a tender outer layer that blends perfectly with the fragrant green bean filling, and the oil sauce is rich and aromatic, offering a unique yet incredibly delicious taste.
