How to make Butterfly Pea Jelly

Extracting the color from butterfly pea flowers
Add 300ml of purified water into a pot, place the pot on the stove, and bring to a boil over high heat. Once boiling, add about 30 fresh butterfly pea flowers, reduce to low heat, and simmer for about 5 – 10 minutes until the flowers release a beautiful deep color, then turn off the heat.
Next, use a sieve to strain the flower extract into a cup and discard the flower residue. If you want a lighter color, you can add more water or reduce the amount of butterfly pea flowers!

Making Butterfly Pea Jelly
Put 1/2 pack of jelly powder, 200g of granulated sugar, and 100g of rock sugar into a bowl, then use a spoon to mix the powder and sugar mixture well.
Next, pour 500ml of filtered water into a pot, add the jelly powder mixture and stir well until dissolved, then place it on the stove to boil on low heat. When the water is gently boiling, add the 300ml of prepared butterfly pea water, pouring it in while stirring gently, and cook for about 3 minutes until it boils again, then turn off the heat.

Cook coconut milk jelly
Gradually add 4 tablespoons of condensed milk and 50g of coconut powder into a bowl, then add 300ml of boiling water and use a spoon to stir until the mixture is completely dissolved.
Mix 1/2 packet of jelly powder with 200g of sugar and 50g of rock sugar. Pour 500ml of filtered water and the entire mixture of jelly powder into a pot and stir well until the powder is dissolved, then place it on the stove.
Cook the jelly mixture over medium-low heat, while cooking remember to stir continuously until it boils, then add all the coconut milk. Gradually add it while stirring gently, cook for about 3 – 5 minutes until it boils again, then turn off the heat.

Remove the jelly from the mold
Prepare plastic jars or glass jars to mold the jelly. First, add a layer of blue butterfly pea jelly into the jar, and continue doing the same until you run out of the blue butterfly pea jelly, then wait about 20 – 30 minutes for the jelly layer to cool and slightly set.
While waiting for the first layer of jelly to set, place the coconut jelly pot on the stove and cook on very low heat to prevent the jelly in the pot from setting.
Press gently with your finger on the blue butterfly pea jelly layer to check; when you see that the jelly layer has slightly set, continue to pour the coconut jelly layer on top. Wait for about another 20 – 25 minutes for it to cool and set, then store it in the fridge fridge for a cooler and more delicious jelly!

- Keep the two layers of jelly warm: Turn on the stove, use a large pot with water and a small bowl with water, place the jelly pot on top to keep the jelly warm and prevent it from solidifying, making it easier to pour the jelly.
Tips for pouring jelly without separating layers
- Use two different spoons to pour into the mold, so the jelly will not bleed colors or mix together.
- Pour a layer of butterfly pea jelly first, wait for the layer to set slightly for about 2 – 3 minutes, then pour the coconut milk jelly layer on top.
- Continue pouring until all the jelly mixture is used. When the jelly cools down, it will set, stick together, and not separate. At this point, just place it in the refrigerator, and it will taste much better when served.
