How to make Mung Bean Meatballs

Prepare the ingredients
Pick the basil leaves, wash them clean, and slice them into thin strips.
Peel and finely chop the shallots and garlic, and slice the chili thinly.
Soak the mung beans in water for about 1 – 2 hours, remove the skins, and let them drain.

Mix the filling and shape
You put into a large bowl the ingredients including basil, shallots, garlic, chili, 100g of pre-processed mung beans, 1 chicken egg, 500g of ground meat, and 1 tablespoon of crispy frying flour.
Add some seasonings including a little fish sauce, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt powder, a little ground pepper, and 1 teaspoon of monosodium glutamate, then mix all the ingredients together.
Tip
- To mix the ingredients easily and evenly absorb the seasoning, you should use your hands while wearing food gloves to mix.
- To keep the mixture from being too wet after mixing, you just need to add the egg yolk instead of the whole egg.
Use your hands to roll into bite-sized balls to shape the patties. Additionally, you can shape them differently according to your preference!
Tip: To easily shape the patties, place the mixed ingredients in the refrigerator for 1 – 2 hours before shaping.
