How to choose good dried wood ear mushrooms:

  • You should choose wood ear mushrooms with large, thick ears and few small mushrooms at the base. The mushrooms should have a dark amber color, slightly glossy (on the top side) and a coffee milk color (on the bottom side).
  • Avoid choosing black wood ear mushrooms that look too dark, as they can become mushy when soaked in water and are less crunchy.

    Soak the wood ear mushrooms in warm water for about 30 minutes to allow them to expand, then rinse them with cold water and let them drain. Next, chop the mushrooms into small pieces and mince them finely.

    For salted duck eggs, discard the egg whites, take the yolks, and steam them until cooked with a little white wine mixed with water. Then, cut into small cubes.

    Remove the roots from the cilantro and chop it finely. Peel and crush the shallots and garlic, then mince them.

    Wash the green onions, using the white parts to mince finely. Remove the seeds from the chili peppers and chop them finely.

    Add salted egg, raw pork paste, minced lean pork, wood ear mushrooms, minced shallots and garlic, chopped cilantro, white onion, and finely chopped chili into a bowl, then season with 1 tablespoon of mayonnaise, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of pepper.
