How to choose fresh, delicious carp
- There are hefty fish that are not delicious, so you should choose those that are long and thick instead of those with big bellies that have a lot of fat. Fresh fish will have clear, bright eyes, and you can see the pupils inside.
- You should choose carp with scales that look even, bright, and do not have dark spots or look too withered.
- You should choose river carp, which grow in a natural environment rather than carp raised in ponds or lakes.
For processed fish
- To ensure that the fish you buy is still fresh, you should ask the seller to catch and process a fish that is still alive for you.
- You should only choose processed fish that still have their heads, as you can observe the head; if the head is still fresh, then it is fish that has just been processed.
- Avoid choosing processed fish that have soft, mushy flesh and have turned dark green or brown, with cloudy white eyes. The flesh of these fish is no longer fresh and may be spoiled.
How to prepare grilled carp using an air fryer

Prepare the ingredients
After buying, clean the carp by removing the scales, taking out all the internal organs, and scraping off the black skin inside the belly of the fish (for fresh fish).
Next, wash the carp with a bit of salt to remove all the slime and eliminate the fishy smell. After that, rinse the carp with clean water and let it drain.
Remove the outer layer of old lemongrass, wash it clean, and then cut it into small pieces.

Marinate with spices
Marinate the fish with 1 teaspoon of seasoning powder and 1 teaspoon of monosodium glutamate, then use your hands to rub the spices evenly over each piece of fish, and let it sit for about 15 – 20 minutes for the fish to absorb the flavors.

Grilling Fish
After the fish has absorbed the seasoning, place the fish in the air fryer, using a piece of parchment paper or aluminum foil to line the bottom of the basket to reduce sticking, then add the fish.
Next, place sliced lemongrass on top of the fish to enhance the aroma.
You should set the grilling temperature to 180 degrees for about 30 minutes, then flip the fish and grill for an additional 15 minutes. Now you have completed the incredibly delicious grilled carp dish.
