Ingredients for Grilled Chicken with Mac Khen For 4 people

Chicken 1/2 bird (about 1.3kg) Mac khen 3 teaspoons Lime leaves 7 leaves Honey 1/2 teaspoon Lemongrass 5 stalks Ginger 15 gr Shallots 3 cloves Mint A little Cilantro 6 stalks Chili powder 1/2 tablespoon Turmeric powder 1/2 teaspoon Honey A little White wine A little Cooking oil A little Common seasoning A little (Salt/ sugar/ monosodium glutamate)

How to choose fresh chicken

  • You should choose chicken with pink-red meat, no unpleasant odor, and the skin should not have bruises or dark spots.
  • If you buy local chicken, choose pieces with pale yellow skin, thin, smooth, high elasticity, and only dark yellow in certain places like the breast, wings, back, compact body, and narrow breast.
  • For frozen chicken, check the origin and expiration date on the packaging to ensure quality.
  • You should not choose chickens with bruises on the skin or meat, as these are chickens that died before processing.
  • When buying, press on the thigh and breast to check if the chicken has been pumped with water. If it feels mushy, slippery, or deformed, do not buy it.
  • If the chicken’s skin is yellow but the inner fat is white, the chicken has definitely been dyed; you should not buy it.

What is mac khén? Where to buy it?

  • Mac khén seeds, also known as fragrant wood, fragrant Sern, fragrant toad, or yellow tamarind, have a spicy and aromatic flavor. Mac khén is a typical spice commonly used in the Northwest region.
  • Mac khén is often used for making dipping sauce or marinating meat for grilling, drying, or hanging in the kitchen. However, note not to use too much as it can become bitter.

How to prepare Grilled mac khén chicken

  • Prepare the ingredients

    Wash the chicken with salted water mixed with a little white wine, then rinse it several times to eliminate any odor, and let it drain.

    Tips for cleaning chicken, no odor:
    • Method 1: Cut off the oil gland at the chicken’s tail or cut off the tip of the chicken’s tail to avoid affecting the dish’s flavor.
    • Method 2: Rub a mixture of vinegar and salt all over the chicken, then soak it for 3 – 5 minutes, and rinse it clean with water.
    • Method 3: Use lemon juice mixed with salt to rub on the chicken for about 5 – 10 minutes, then rinse with water.

    You lightly sauté the washed lime leaves and mắc khén until you can smell the fragrance.

    Next, you peel the ginger, wash it clean, and slice it thinly. For the lemongrass, remove the rough outer layers, cut 3 stalks into thin slices, and crush the remaining 2 stalks before cutting them into pieces.

    Pick the inedible parts off the mint and coriander, wash them clean, and let them drain.

  • Pounding the marinade mixture for chicken

    Add the ingredients including 2 teaspoons of salt, sliced lemongrass, 7 lime leaves, 3 teaspoons of mắc khén, 1 teaspoon of monosodium glutamate, 1 teaspoon of sugar, and 5 sprigs of mint into a mortar and pound them finely.

  • Marinate the chicken

    You mix the crushed mixture with a little cooking oil and 1/2 teaspoon of turmeric powder in a bowl, and mix well. Then, you rub the entire mixture all over the chicken, inside and out.

    Next, you use cilantro, chopped lemongrass, and sliced ginger, placing them inside the chicken, then wrap it with plastic wrap and let it sit in the refrigerator for about 2 – 3 hours to let the chicken absorb the spices evenly.

  • Grill the chicken

    Before grilling, you preheat the oven to 175 degrees Celsius and let it heat for 10 minutes.

    After the oven is hot, you place the chicken in to grill for 30 minutes at 170 degrees Celsius. Then, you take the chicken out, brush a layer of honey on the chicken’s surface, and put it back in to grill for another 8 – 12 minutes at 200 degrees Celsius until the chicken is cooked evenly. If you want the skin to be crispier, increase the grilling time by 15 minutes.

    Once finished grilling, you take the chicken out to present and enjoy.

    The chicken after roasting will have a beautiful golden color. The skin is crispy and absorbs the flavor perfectly, and the pieces of chicken are not dry at all but juicy, tender, and fragrant with the smell of honey and black cardamom.

Tips for making the dish

  • When grilling, you must pay attention not to let the fire be too high as it will burn the chicken. You must monitor and turn the chicken meat continuously.
