- Fresh chicken has a bright pink skin, not darkened, bruised, or showing any unusual tiny spots.
- Pressing the chicken with your hand should feel elastic and firm, and the meat should not be too soft or slimy.
- You should avoid buying chicken that has a strong, fishy smell as this is mostly chicken that has gone bad from being left too long and should not be used.
How to choose good quality potatoes
- Good potatoes are those with a bright brown skin, not turning into any unusual colors, and especially do not have tiny dark spots.
- When held, the potatoes feel heavy, and pressing them with your hand gives a sensation of moderate softness, not too hard, and above all, they should not be rotten or leaking any unusual fluids.
- You should avoid buying potatoes with overly wrinkled skin, mushy flesh, or bruises as they are spoiled potatoes, which are not good for health.
- Another thing to note is that you should absolutely avoid buying potatoes with green skin or having sprouted as they are toxic.
How to choose fresh carrots
- Fresh good carrots usually have a bright orange color, smooth skin, not rough, and do not have dark spots.
- When pressed, the carrots feel firm, not too soft or rotten. In particular, observe the top of the carrot, it should still be green and firmly attached to the body, not separated.
- You should avoid buying carrots with broken tops, slimy bodies, and especially those that emit an unusual fishy smell as they have been excessively treated with growth chemicals.
How to choose fresh and crispy green beans
- Fresh and crispy green beans are commonly bright green in color, still looking fresh, and do not have dark spots or uneven coloring.
- Observe the stem; it should not be too wilted, the beans should be slender, and importantly, the surface should have fine hairs, plump, not too thin.
- Additionally, you should avoid buying beans with many distinct bumps, as these are older beans with larger seeds inside, which will not taste good when cooked.

Prepare the ingredients
First, with a pre-prepared chicken, after purchasing, rub some salt all over the chicken meat, then rinse it 1 – 2 times with clean water and let it drain.

- Method 1: You can soak the chicken in a mixture of vinegar diluted with a little salt for 3 – 5 minutes.
- Method 2: Alternatively, you can use a mixture of lemon juice mixed with salt and follow the same cleaning method for the chicken.

Potatoes and carrots should be peeled with a peeler, washed with water until clean, cut into bite-sized pieces, and soaked in diluted saltwater for 3 – 5 minutes, then rinsed again until clean and drained.
For green beans, remove the ends, then remove the fibrous strands on both sides of the beans, wash with clean water, drain, and cut into bite-sized pieces.
For parsley, remove the roots, wash clean, drain, and chop finely. Peel the onion and cut it into wedges. Finally, peel the shallots and garlic, then chop finely with a knife.

Marinate the chicken and make the basting sauce
Once the ingredients are prepared, place the cleaned chicken into a bowl and marinate together with all the minced garlic, shallots, 2 teaspoons of seasoning, 1 teaspoon of monosodium glutamate, 1 teaspoon of ground pepper, and 300g of parsley finely chopped.
Then, gently rub all the ingredients evenly over the surface of the meat and let the chicken absorb the seasoning for about 1 night.
At the same time, prepare the basting sauce by taking a bowl and adding 1 tablespoon of unsalted butter melted, 3 tablespoons of honey, and 3 tablespoons of lemon juice, and mix well with a spoon.

Grilling Chicken
When the chicken has absorbed the seasoning evenly, preheat the oven to 180 degrees Celsius for 10 minutes. Next, place the chicken on the grill, then proceed to grill for the first time at a temperature of 150 – 160 degrees Celsius for about 45 minutes.
After that, open the oven, carefully take out the chicken, and use a specialized brush to evenly coat 1/2 cup of honey sauce over the entire chicken, then continue grilling for the second time at a temperature of 200 degrees Celsius for 5 minutes.
Slowly take the chicken out again and use the brush to spread the remaining cup of sauce over the chicken, grill for an additional 10 – 25 minutes at 180 degrees Celsius, until the chicken skin turns a golden color, then turn off the oven and place the chicken on a plate.

Grilling Vegetables
Once you have taken out the chicken, add all the potatoes, carrots, green beans, onions, 1 tablespoon of unsalted butter, and drizzle 1 tablespoon of cooking oil into a glass bowl.
Then, place the bowl of vegetables in the oven and grill at a temperature of 180 degrees Celsius for about 7 – 10 minutes, until all the ingredients are soft, then turn off the oven, carefully take it out, and enjoy it with the freshly grilled chicken!
