How to choose fresh and delicious chicken

For pre-prepared chickens
- Fresh and delicious chickens often have a characteristic golden skin. Additionally, their skin is quite thin, feels smooth to the touch, is not too rough, and has good elasticity.
- Fresh and delicious chicken meat has a natural pink-red color, not too pale or too dark, and does not have bruises or clotted blood.
- Absolutely do not buy chickens with pale or purple bruised meat because those are chickens that died before being processed, which will not be good for health when eaten.

Prepare the ingredients
After purchasing the chicken, pluck out any remaining feathers, then wash the chicken with salt water for about 3 – 5 minutes and rinse thoroughly with clean water, then drain.
Tips for cleaning chicken, no fishy smell
- To clean the chicken thoroughly and avoid a fishy smell, soak the chicken in water with a few crushed ginger slices and salt (about 1 tablespoon). Fill the water to about half the basin, then soak the chicken for 5 minutes.
- After soaking, rinse with cold water about 3 – 4 times. Put the chicken into boiling water, briefly blanch the chicken to firm up the meat and skin. Then take it out and let it drain.

Lemongrass and garlic are peeled, chilies are stemmed, and rinsed with water. Slice the lemongrass, and finely chop the garlic and chili.

Making the sauce
Place a pan on the stove and heat 2 tablespoons of cooking oil until it boils, then add sliced lemongrass and minced chili to sauté for about 1 – 2 minutes over medium heat.
Add to the pan a mixture of spices including: 1 pack of five-spice powder, 3 tablespoons of oyster sauce, 2 tablespoons of honey, 1 tablespoon of chili sauce, 1 tablespoon of spicy satay, 1 teaspoon of chili powder, and 1 teaspoon of ground pepper into the pan and stir for about 3 minutes. Continue to pour in 1/2 cup of water (rice bowl) and boil for another 5 minutes before turning off the heat, then pour the sauce into a bowl.
Place the pan back on the stove, add the minced garlic to sauté until fragrant, then turn off the heat.

Marinating the chicken
Place the chicken in a bowl, use the spicy sauce mixture just cooked to pour over the chicken, and use your hands to massage it evenly so that the chicken is well-coated with the sauce. The chili and lemongrass in the spicy sauce should be poured into the chicken’s cavity. Pour both the sauce and the sautéed garlic into the chicken’s cavity.
Spread honey evenly over the chicken, add another layer of honey on the chicken’s body and marinate the chicken for 30 minutes.

Grilling Chicken
Then you place the chicken in the oven, grilling at a low temperature (about 120 degrees Celsius) for 30 minutes.
Next, grill at a high temperature (about 200 degrees Celsius) for 15 minutes on the top side and 15 minutes on the bottom side of the chicken.
Check if the chicken is evenly golden, and if the skin has turned a brownish color. For each side, continue grilling for another 7 minutes at high temperature to give the chicken a slightly charred flavor which will be more delicious.
