  • To make grilled chicken wings, you can choose industrial chicken wings or free-range chicken wings. Industrial chicken wings will have more meat, while free-range chicken wings will be chewier and tastier when cooked.

How to Prepare Spicy Grilled Chicken Wings Korean Style

  • Prepare the chicken wings

    Wash the chicken wings with clean water. Next, pour 2 liters of hot water into a basin and dissolve 2 tablespoons of salt in it.

    Soak the chicken wings in the hot salted water for about 5 minutes, then use a knife to scrape off any dirt and grease on the chicken skin. After that, rinse with clean water, let it drain, and cut into bite-sized pieces.

    How to clean chicken wings and eliminate odor

    • After rubbing with salt, you can use a mixture of alcohol and sliced, crushed ginger to rub and massage the entire chicken wing once more to help eliminate any odor and dirt.
    • Wash clean and let it drain. Alternatively, you can add lemon to the water and soak the chicken wings for 15 – 20 minutes. Then take them out, rinse with cold water, and let them drain.

  • Marinate the chicken wings

    Marinate the chicken wings with 1 tablespoon of Korean chili sauce, 2 tablespoons of soy sauce, 1 tablespoon of brown sugar, 1 tablespoon of minced garlic, 1/2 tablespoon of minced ginger, 1 tablespoon of rice vinegar, and 1 tablespoon of white sesame seeds.

    Mix well and cover with plastic wrap, marinate for about 3 hours for the chicken wings to absorb the flavors.

    Tip: If you have time, you can marinate for about 8 hours or overnight for a more delicious result.

  • Grill the chicken wings

    To stabilize the oven temperature, preheat the oven for 10 minutes at 200 degrees Celsius.

    Place the chicken wings on a tray, use a brush to evenly coat a layer of sesame oil on the chicken wings and put them in the oven for 30 minutes at 200 degrees Celsius.

    After 30 minutes, open the oven, take the chicken wings out, use a brush to evenly coat a layer of marinade on the chicken wings and continue grilling the chicken wings at 220 degrees Celsius for another 10 – 15 minutes to complete.

    Tip: If you don’t have an oven, you can also grill chicken wings on a charcoal stove.
