- If you want to choose delicious native chicken, select pieces with pale yellow skin, thin, smooth, high elasticity, and only deep yellow in certain areas like the breast, wings, and back, with a compact, firm body and narrow breast.

Prepare the chicken
For the whole chicken, ask a friend to pluck the feathers for you, then use coarse salt or rub lemon on the chicken skin to eliminate the odor, and rinse with clean water, then let it dry.
How to clean chicken meat, odor-free
To prevent the chicken from smelling, you need to remove all the feathers, including the fine down feathers, so that the chicken is white, clean, and less smelly.
Mix vinegar and salt in a ratio of 2 parts salt to 1 part vinegar, then rub it all over the chicken, scrubbing several times before rinsing thoroughly with clean water, or rub lemon and salt on the chicken skin or use a bit of ginger and white liquor to rub on the chicken to eliminate the smell.

Prepare the marinade sauce
Place a pan on the stove, add 3 tablespoons of fish sauce, 3 tablespoons of brown sugar, 1 tablespoon of monosodium glutamate, 2 teaspoons of turmeric powder, 2 teaspoons of five-spice powder, and 4 tablespoons of honey.
Stir well until the mixture is combined, and stir until the marinade sauce boils, then turn off the heat.

Marinate the chicken
Pour the prepared marinade into a bowl, then add the cleaned whole chicken, using hands with gloves to dip the chicken into the marinade, spreading it evenly over the entire chicken.
Then marinate the chicken for 30 – 45 minutes to let it absorb the spices.

Roast the chicken
After marinating the chicken, use a skewer to pierce through the body of the chicken.
Preheat the oven for 10 minutes at 180 degrees Celsius, then place the chicken in to roast for 40 minutes, until the chicken is cooked through.
During the roasting process, every 10 minutes, open the oven and use a brush to apply a mixture of 1 tablespoon of honey and 1 tablespoon of water onto the chicken to prevent it from drying out and to absorb the spices better!
