Quail 15 birds Satay sauce 1 tablespoon Minced garlic 5 tablespoons Chopped chili 1 tablespoon Fish sauce 5 tablespoons Cooking oil 3 tablespoons Common spices a little (seasoning/ MSG/ salt)

How to choose fresh and delicious quail

  • To choose good quail, you should select those that are proportionate in size, and when touched, you can feel the meat’s elasticity.
  • At the same time, prioritize those with slightly pink meat, skin not darkened or surface showing many unusual blood vessels.
  • Absolutely do not select those that are discolored, feel soft and mushy when held, and have an unpleasant odor.

  • Prepare the quail

    The quail has been cleaned, when bought home, wash it thoroughly, use tweezers to pluck out any remaining feathers (if any).

    Next, soak the quail in a mixture of diluted salt water and then place it in a basket to drain.

    How to remove the fishy smell from quail

    • First, use tweezers or a gas torch to completely clean the quail’s feathers.
    • Next, add a few slices of fresh ginger to the diluted salt water and then wash the quail in it for about 5 minutes.
    • After that, rinse the quail with water about 2 – 3 times until clean, then it can be cooked.

    To marinate the quail, place 15 quails in a bowl, add 5 tablespoons of minced garlic, 1 tablespoon of minced chili, 1 tablespoon of satay chili, 1 tablespoon of seasoning powder, 1 tablespoon of monosodium glutamate, and 5 tablespoons of fish sauce, mix well and marinate for 30 minutes.

  • Grilling quail

    After 30 minutes, you will place each quail on a grill, put it on the charcoal stove, and grill them for about 20 minutes. Turn them regularly so that the quail cooks evenly without burning.

    After grilling for 15 minutes, you apply a layer of oil on the surface of the quail to make it look more appealing and delicious.
