Method for Preparing Boiled Pork Wrapped in Rice Paper

  • Prepare Ingredients

    To clean and eliminate odor, the pork you bought should be rinsed briefly, then rub a little salt on the surface of the meat and rinse it clean with water twice, then let it drain.

    For the accompanying vegetables, pick fresh lettuce leaves, discarding any wilted, bruised, or rotten leaves, then soak for 10 minutes in diluted salt water and rinse well with cold water. Place the vegetables in a basket to drain.

    Wash the cucumber thoroughly; you can peel it or not, depending on your preference. Cut the cucumber into thin slices about the length of a finger, and place it on a plate.

    Peel the garlic, wash it along with the chili, then mince finely.

    • Blanch the pork in boiling water to remove the meat odor.
    • Use 3 – 4 shallots, peel and crush them, add to the water, then put the piece of meat in and boil for about 3 minutes; the shallots will help eliminate the smell very effectively.

  • Boil and slice the meat

    After the meat has been cleaned and the odor removed, place the meat into a pot of water along with 2 chopped shallots and set the heat to medium, boiling the meat for about 30 minutes.

    After boiling, check by using the tip of a chopsticks to pierce the piece of meat; if no red blood runs out and the meat is soft and firm, it is cooked. Turn off the heat, remove the meat onto a plate, and let it cool down.

    When the meat has cooled down a bit, slice it into even thin slices and arrange the meat on a plate.

  • Prepare the dipping sauce and finish

    You mix into bowl 3 tablespoons of fish sauce, 2 tablespoons of sugar, 3 tablespoons of water, the juice of 1/2 lime, the juice of 1 calamondin, and minced garlic and chili, then stir well until the sugar dissolves. Adjust the seasoning to suit your family’s taste.
