Ingredients for Vegetarian Gio Song – Vegetarian Sausage Serves 3 – 4 people

Tofu 300 gr Wheat gluten 200 gr Salt 1 teaspoon Vegetarian seasoning 1 tablespoon Sugar 1 tablespoon Pepper 1/2 teaspoon Potato starch 1 tablespoon Green bean starch 1 tablespoon

How to choose fresh and delicious tofu

  • Choose soft tofu with a smooth surface; when touched, it feels soft, and if it feels light to hold, it’s worth buying. Pieces of tofu that are heavy, firm, slightly hard, and square should not be purchased.
  • Good pieces of tofu made naturally have an off-white or milky white color, with no signs of turning yellow like tofu mixed with gypsum.
  • Pure tofu will have a fragrant smell, while tofu with gypsum will smell like lime or have no smell at all.
  • If you have time, you can also make tofu at home to ensure hygiene!

  • Prepare the water

    Mix 100ml of cold water with 50ml of boiling water, stir well to make the water for mixing the flour.

    Put 200gr of mì căn flour into a bowl, gradually add the prepared water into the flour bowl, then use chopsticks to stir well.

    The flour mixture is still quite dry, gradually add 100ml of cold water into the bowl and use your hands to knead the flour into a dough.

    Cover the dough tightly and let it rest for about 30 minutes.

  • Blend the mì căn flour with tofu

    After resting, take the mì căn flour out, tear it into small pieces and put it in the blender.

    300gr of tofu, drained, then tear into small pieces to add to the blender with the mì căn flour.

    Add 1 teaspoon of salt, 1 tablespoon of vegetarian seasoning, 1 tablespoon of sugar, and 1/2 teaspoon of pepper.

    Blend the mixture for 1 minute, then add 1 tablespoon of potato flour and 1 tablespoon of green bean starch. Blend for another 2 minutes until the mixture is smooth.

  • Kneading the dough for the second time

    Transfer the blended mixture to a bowl or large basin.

    Knead the dough against the bowl several times for about 10 minutes to make the dough stick together and become more chewy.

    Tip: The more you knead, the chewier the vegetarian sausage will be.

  • Making vegetarian meatballs

    Divide the mixture into small portions, store them in airtight bags, and place them in the freezer for later use.

    You can add soaked and chopped wood ear mushrooms and finely chopped green onions, mix well, and use them in dishes like stuffed bitter melon or hot pot,… which are also very delicious.
