What is Mirin?

How to Make Japanese Teriyaki Sauce

Mix Ingredients
Add the mixture for the Teriyaki sauce consisting of: 20ml soy sauce, 110gr brown sugar into a bowl and stir until dissolved.
Then add 7.5gr minced ginger, 5gr minced garlic, 15ml honey, 15ml sesame oil, and 45ml Mirin into the bowl and mix well.

Cook the Teriyaki Sauce
Pour the Teriyaki sauce mixture into a pot and bring to a boil. When the Teriyaki sauce is boiling, reduce the heat and simmer for about 4 minutes until the sauce thickens.
Remove the pot from the stove and let the Teriyaki sauce cool to complete the process.
Note: When the Teriyaki sauce has completely cooled, pour it into tightly sealed jars and store in the refrigerator for longer use.

How to make Grilled squid stuffed with teriyaki sauce

Cook rice
Put 150g of rice into the pot, 7 cloves of garlic peeled, and enough water. Soak the rice for 15 minutes, then cook it until done.

Prepare the squid
To clean the squid, first you need to rinse it briefly in water to remove dust and dirt. Then, grab the tentacles and pull them away from the body.
Next, you need to remove unnecessary parts such as the ink sac, the membrane, the brown digestive sac, and the spine.
After that, rinse again with diluted salt water to clean thoroughly, while also eliminating the fishy smell of the squid.

Make the sauce
Add 50g of Teriyaki sauce and 1 tablespoon of minced garlic into a bowl and mix well.

Stuff and marinate the squid
Stuff the cooked rice into the squid body, then brush the Teriyaki sauce evenly on both sides of the squid.

Grilled Squid
Grill the squid for 5 minutes at 180 degrees Celsius.
Take the squid out of the oven, brush an additional layer of Teriyaki sauce on the squid, and grill for another 10 minutes at 180 degrees Celsius.
