How to choose fresh ingredients
How to choose fresh shrimp
- You should choose shrimp that are still alive, swimming vigorously, with a transparent outer shell and a slight smell of seawater, with the legs tightly attached to the body.
- Fresh shrimp usually have tails that are curled together. If the tail of the shrimp is spread out, it means the shrimp has been pumped with chemicals or injected with water to make it plump, so you should not buy it!
- Additionally, you should avoid selecting shrimp that are slimy, have a body that has curled into a round shape instead of being straight as normal. When you gently press and move your hand on the shrimp shell, it feels gritty as if there are particles in the shell.
- To feel secure when choosing, you should buy shrimp from reputable seafood stores to avoid mistakenly purchasing shrimp that have been pumped with chemicals!
How to choose good dried shiitake mushrooms
- You should choose mushrooms that are not broken and have a light brown cap (basically there is no significant color change when the mushrooms are dried).
- When buying dried shiitake mushrooms, you should not choose those with strange odors and white mold spots. Because they are in a damp stage, consuming them may not be good for health.
- Therefore, you should choose mushrooms that are well-packaged with clear origin and expiration dates at supermarkets and reputable stores like Bách Hóa XANH to ensure safety when using!
How to choose good dried wood ear mushrooms
- When buying, you should prioritize selecting those with large, thick caps and few small mushrooms at the base, for easier preparation and better taste.
- The color of good wood ear mushrooms is usually a dark amber, slightly glossy (for the top of the mushroom) and coffee with milk color (for the underside of the mushroom).
- You should not choose dried wood ear mushrooms that look too black, as this type can become mushy when soaked in water and is less crunchy.

How to Make Hai Phong Shrimp Noodles

Prepare the Shrimp
To remove the fishy smell from the shrimp, soak the shrimp in diluted salt water for 2 – 3 minutes, then rinse with clean water, and boil in a pot with 1 liter of water for about 2 minutes until the shrimp are cooked. Remove the shrimp and peel off the head, shell, legs, and tail, and take out the shrimp thread.
Next, use a blender to puree the shells, heads, tails, and legs of the shrimp with the 1 liter of shrimp boiling water, then use a strainer to filter out the residue.
Quick Ways to Remove Shrimp Threads:- Method 1: Use a knife to make a small cut along the back of the shrimp and remove the shrimp thread.
- Method 2: Count backwards from the tail of the shrimp to the second groove, connecting between the two segments of the shrimp shell, pierce with a toothpick and pull to extract the shrimp thread.
- Method 3: Turn the shrimp over, hold the body of the shrimp with one hand, use the other hand to peel back both sides of the shrimp head, then firmly hold the joint between the head and body of the shrimp, gradually separating the head from the body. At this point, the shrimp thread will come out with the part connected to the head.
