  • Parmesan cheese, known as Parmigiano-Reggiano in Italian, is a hard granular cheese commonly used in pasta and spaghetti.
  • Parmesan is made from cow’s milk and must undergo a production process of at least 1 year, typically aging from 2 to 3 years for the cheese to reach standard quality. To preserve its flavor, you should buy Parmesan in block form; when eating directly or cooking, it can be grated, shredded, sliced, or crumbled for use!

How to make Savory Rosemary Cookies

  • Mix the dough

    Add 60g of grated Parmesan cheese, 110g of all-purpose flour, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1 tablespoon of finely chopped rosemary leaves into the bowl, then mix well.

    Next, place the flour mixture into the blender along with 50g of cold, chopped unsalted butter and 60ml of cold water. Blend the mixture until the dough can stick together into a smooth, pliable mass.

    Tip: If the dough is too wet, you can add a little more dry flour, or if the dough is too dry, add a little water.

    Next, you shape the dough into a ball, place it in a bowl, cover it tightly, and let it proof for 1 hour in the refrigerator.

    Preheat the oven to 170 degrees Celsius for 15 minutes.

    Then, place the cookies on a tray lined with parchment paper and bake at 170 degrees Celsius for 15 – 20 minutes until the cookies are evenly golden brown.
