How to choose delicious jujube
- When buying jujubes, you should choose those that are oval or egg-shaped, about 1 – 1.5 finger lengths long. The color of delicious jujubes should be dark pink and slightly shiny.
- In addition, you should select jujubes that have small seeds, a concave base, short stems, and thin, slightly wrinkled skin.
- To ensure safety and quality when buying jujubes, you should choose products that are well-packaged, with a clear origin, sold on reputable e-commerce sites.
- Avoid buying expired jujubes, those with white spots and a moldy smell at the stem.
What is licorice? Where to buy it
- Licorice is known as a common medicinal herb in both Eastern and Western medicine, with a sweet taste and a gentle fragrance that many people love.
- In Vietnam, depending on the region, licorice has different names such as raw licorice, national elder,… The places where licorice is most commonly grown in our country are Vinh Phuc, Hai Hung, and Hanoi.
- Currently, the price of 1 kg of dried licorice on the market is about 120,000 – 220,000 VND. (Price updated in December 2021).

How to make Herbal Tắc Tea

Prepare tắc
Wash the tắc thoroughly with water and let it drain. Then, take a very sharp knife to easily cut the tắc into thin slices that are easy to eat.

Cook ginger syrup
Peel the fresh ginger, wash it clean, and then cut it into small strands. Next, put the sliced ginger along with 250g of sugar, 150ml of water, and 1g of salt into a pot.
Place the pot on an electric stove, cook at medium heat for about 5 minutes until the sugar completely dissolves and the syrup starts boiling, then add 50ml of lemon juice, stir well, and continue cooking for another 10 minutes at medium heat until the syrup thickens, then turn off the heat.
Pour the ginger syrup into a bowl to cool slightly before using. If you want to store it for a long time, transfer the cooked ginger syrup into a glass jar, let it cool completely, close the lid, and place it in the refrigerator.

Cook red apple sugar water
Add 350g of sugar and 250ml of water into a pot, then place it on the stove, boil at medium heat for about 5 minutes until the sugar water boils. Add 15ml of lemon juice and stir well.
Next, add 200g of jujube and mix well, cooking for an additional 15 minutes on low heat until the sugar water thickens and the aroma of apple rises, then turn off the heat.
After that, pour into jars/bottles with lids, let cool, then cover the lid. If stored at room temperature, it can be used for 15 days; for longer storage, it should be kept in the fridge refrigerator for up to 1 month.

Cook sugar syrup
Add 500g of sugar and 300ml of water into a pot, then place it on the stove, boil at medium heat for about 5 minutes, then turn off the heat, let it cool, and pour it into food containers for later use.
Tip: To avoid crystallization, when boiling the sugar syrup, do not stir it with a spoon or chopsticks! -
Steep tea
Put 5 tea bags along with 5g of licorice and 1 liter of hot water (about 80 – 90 degrees Celsius) into a teapot. Cover it and steep the tea for about 5 – 7 minutes.
After the steeping time is over, remove the tea bags and pour the brewed tea into a large basin, then add 250g of ice cubes, stir well to cool the tea faster, and preserve the aroma of the tea.

Make herbal calamansi tea
Put 300ml of tea concentrate, 40ml of sugar water, and 20ml of calamansi juice into a small jug, then stir well.
Next, prepare a 1-liter glass, fill it with ice cubes, and pour in the entire mixture of tea concentrate, sugar, and calamansi.
Decorate around the rim of the glass with thin slices of calamansi, then add 15ml of ginger syrup, 20ml of apple sugar water, 30g of preserved calamansi, and 10g of goji berries on top.
Now we have a refreshing and delicious glass of herbal calamansi tea to enjoy!
