  • Prepare the Kumquat

    Prepare a basin of water, add 1 tablespoon of salt, stir well to dissolve the salt, then soak the kumquat for about 15 minutes.

    After 15 minutes, take them out using a basket to drain, then cut them in half one by one.

    Next, squeeze the calamondin juice through a strainer to remove the seeds. Cut the peel into small pieces.

  • Boil calamondin with rock sugar and honey

    Place a pot on the stove, add 1kg of rock sugar and heat until about 2/3 of the sugar has dissolved, then add the calamondin peel. Stir until this mixture boils again, then add 1 tablespoon of salt.

    Continue cooking until the mixture boils vigorously, then use a ladle to remove the foam, then turn off the heat, add 200ml of honey, and stir well.
