Beef tenderloin 2 slices (each slice 300gr) Soy sauce 4 teaspoons Yuzu juice 3 teaspoons (or lemon juice) Shio Koji 3 teaspoons (or miso) Dried onion 4 teaspoons (chopped finely) Green onion a little (chopped small) Sesame oil a little Common spices a little (salt/ pepper/ sugar)

How to choose fresh and delicious beef tenderloin

  • You should choose tender, small pieces of meat, not too smooth, and when pressed, the meat should have good elasticity, not sticky, and should not have a foul smell, which indicates freshness.

  • It is advisable to buy beef tenderloin from reputable large grocery stores, food counters, or supermarkets to get the best quality meat.

  • Avoid purchasing beef that has a pale green color, shows round white spots between the meat fibers, and has a foul smell.

  • Yuzu is a famous fruit from Japan, belonging to the citrus family, with a distinctive fragrance and a refreshing taste.
  • Shio Koji is a thick seasoning fermented with Koji mold cultivated from rice, soybeans, wheat, or soybeans along with salt and water.
  • You can purchase Yuzu, Shio Koji, and Miso at Japanese food stores or e-commerce websites.

  • Prepare the beef

    After purchasing the tenderloin, rinse it briefly with water and let it drain.

    Evenly coat both sides of the meat with a layer of sesame oil, then sprinkle a little salt and a bit of pepper evenly over the surface of the meat.

    Tip: You should only add salt and pepper just before cooking, as seasoning too early can cause the meat to dry out due to the salt absorbing moisture from the meat.

  • Sear the beef

    Place a pan on the stove, wait for the pan to heat up, then add the meat to sear for 1.5 – 2 minutes.

    While waiting for one side of the meat to cook, sprinkle salt and pepper on the other side. You can gently press down to help the meat dry out faster.

    Then, flip the meat over and continue searing until the piece reaches your desired doneness: rare, medium, well-done.

    Transfer the meat to a plate and let it rest for the same amount of time it was cooked.
