Prepare and Marinate the Beef
After purchasing the beef, use a knife to trim off the sinews, and there’s no need to remove the fat to make the steak more aromatic.
Then, use a dry paper towel to wipe the piece of meat clean, then cut the meat into large slices about the thickness of a finger joint.
Use a specialized meat pounder to tenderize the meat, then marinate it with a mixture of spices including: 1/2 teaspoon of ground pepper, 1 crushed garlic clove, 1 tablespoon of oyster sauce, 1 tablespoon of cooking oil, and 1/2 tablespoon of cornstarch.
Mix well and then place the beef in the refrigerator for about 1 hour to allow the meat to absorb the spices evenly.

Wash and peel the potatoes, then cut them into small sticks about the length of a finger. Put a pot of water on the stove, and boil the potatoes over high heat for about 10 – 15 minutes.

Fry the beef
Place a pan on the stove, add 1 tablespoon of cooking oil (or 1/2 tablespoon of butter) and heat it over medium heat. When the pan starts to smoke slightly, add the meat and then add another tablespoon of cooking oil.
Fry each side of the beef over medium heat for about 5 – 7 minutes, then remove it to a plate and drizzle 1 tablespoon of lemon juice evenly over the meat.

Add 1/2 teaspoon of ground pepper, 1 tablespoon of oyster sauce, 2 tablespoons of soy sauce, 1/2 tablespoon of cornstarch, 1 tablespoon of vinegar, 1/2 tablespoon of sugar, 1 tablespoon of white wine, a little bit of mint leaves, and 3 tablespoons of water into a bowl and mix well until dissolved.
Place a pot on the stove, heat 1 tablespoon of unsalted butter over medium heat, then sauté garlic and ginger until fragrant for about 3 minutes.
Next, add diced tomatoes and onions, stir-fry until cooked, then add the previously mixed ingredients into the pot, stir well until it thickens, then turn off the heat.
