What is Mirin?
- Mirin is a seasoning with a sweet flavor, a light yellow color, and a slightly thicker liquid than water. It contains about 40% – 50% sugar and 14% alcohol. Mirin is used to season braised and grilled dishes to give them a glossy finish when cooked.
- You can buy Mirin at supermarkets, baking stores, or e-commerce websites.
- The price of Mirin ranges from 100,000 to 190,000 VND depending on the type.
How to make Japanese Teriyaki Sauce

Mix the ingredients
You put the mixture to cook the Teriyaki sauce including: 20ml soy sauce, 110gr brown sugar into a bowl and stir until dissolved.
Then add 7.5gr minced ginger, 5gr minced garlic, 15ml honey, 15ml sesame oil, 45ml Mirin wine into the bowl and mix well.

Cook the Teriyaki sauce
Pour the mixture to cook the Teriyaki sauce into a pot, bring to a boil. When the Teriyaki sauce boils, reduce the heat and simmer for about 4 minutes until the sauce thickens.
Remove the pot from the stove and let the Teriyaki sauce cool to finish.
Note: When the Teriyaki sauce is completely cool, pour it into jars with tight lids, store in the fridge to keep it for a long time

How to Choose Good Beef for Steak
- Beef for steak does not necessarily have to be the best part of the cow. Remember, each piece of meat is suitable for different dishes. For steak, you should choose a piece of meat with marbling, as the fat will melt during cooking, making the meat rich and not dry.
- Choose fresh meat that is not dark red, with small, tender fibers. Avoid large and tough fibers. The beef fat should be bright yellow, with white and firm tendons; avoid soft fat.
- Gently press the meat with your finger to feel its good elasticity. If it doesn’t stick to your hand and has no foul smell, you can choose a fresh piece of beef to prepare your dishes.
How to prepare Teriyaki steak

Prepare and marinate the beef
After purchasing, wash the beef thoroughly, let it drain, and use a paper towel to dry it.
Slice the garlic thinly. Rub oil and garlic on both sides of the meat, and marinate the meat for about 15 minutes.

Prepare the other ingredients
Cut the broccoli into bite-sized pieces. Then, place the broccoli in boiling water with a little salt; when the broccoli is cooked, take it out and put it in a bowl of ice water.
Reuse the boiling water, wait for it to boil again, and add 2 eggs to boil them soft-boiled for about 5 – 6 minutes.
Slice the garlic thinly.

Cooking the steak
Use a spoon or tongs to remove the garlic from the marinated meat. Then heat a pan with a little oil on the stove, when the pan is hot, add the meat and sear it to your preferred doneness.

Drizzle teriyaki sauce
Reduce the heat, drizzle teriyaki sauce on both sides of the meat, when the sauce thickens and clings to the meat, remove the meat.
Put the pan on the stove, add oil and thinly sliced garlic and sauté until golden brown and fragrant.

To complete the dish, you should slice the meat, cut the egg, drizzle teriyaki sauce over the meat, and garnish with fried garlic.

- Thaw the meat before cooking: If your meat is frozen, you should thaw it before marinating so that when cooked, the piece of meat does not become mushy and absorbs the seasoning unevenly.
- For the pan, when it is hot, add the meat for searing over medium heat. Searing does not need to take too long, about 3 minutes; wait until it is golden brown to flip. When the meat turns golden, reduce the heat to cook it thoroughly from the inside. Those who enjoy rare meat would find it best. Do not try to cook the meat too well done as overcooked beef will become dry. While searing, you can add some crushed garlic to enhance the aroma.
- Use simple seasoning: The simpler the marinade for the steak, the more delicious it will be. Just use salt and pepper, rub it well with your hands to let the meat absorb the seasoning, add olive oil, and let the meat rest for 30 minutes before cooking.
- Check the doneness of the meat by relying on the firmness of the meat to determine its color inside. Rare – the inside of the meat is very red, moist, and slightly warm; Medium rare – the inside of the meat is still red and hot; Medium – the center of the meat has a red color, surrounded by pink, and is warm; Medium well – the inside of the meat is pink and hot; Well done – the inside of the meat has completely lost its pink color, the fibers are brown-gray but still retain moisture, and the meat is very hot. Another method is to use a cooking thermometer to check the desired level of doneness of the meat. For example, at the 6th minute of grilling, the meat still has a pinkish red inside, and at the 8th minute, the meat is more well done and has a pale pink color.
