  • In terms of elasticity, you should press the pork thigh with your hand to check its elasticity. If it returns to its original state after pressing, this is fresh meat; if it becomes mushy or slimy, do not buy it.
  • In terms of fat and skin, you should choose pieces of meat that have a distinct separation between meat and fat but still stick tightly together.

  • Marinate the meat

    After buying the meat, wash it clean, then pound it to make it thin and tender, after that you will start marinating with 1 spoon of seasoning, a little pepper for about 5 minutes.

  • Breading the meat

    The next step after marinating the meat is to bread it.

    First, coat the meat with a layer of flour, then dip it in a beaten egg layer.

    Continue to coat with a second layer of flour and then dip again in another layer of beaten egg.

    Finally, coat the pork thigh piece with a layer of breadcrumbs and let the meat rest in the fridge for about 20 minutes.

  • Cut the cabbage and mix the sauce

    The cabbage, after being thoroughly washed, will be cut or shredded into thin strips, then soaked in ice to maintain its crunchiness.

    Next, you mix the sauce according to the following formula: 2 tablespoons of soy sauce, 1 tablespoon of black vinegar, 4 teaspoons of sugar, and 1 teaspoon of diluted tapioca flour.

    Then, you heat a pan and add 1 teaspoon of cooking oil. Wait for the oil to heat up, then pour in the mixed sauce, stirring continuously until it thickens.

  • Fry the meat and decorate

    You place a pan on the stove and pour in enough cooking oil so that the meat can be fully submerged. Then, add the meat and fry for about 5 minutes until it is evenly golden, then remove and let it drain.

    Next, cut the meat into small pieces, pour the sauce over the meat, and sprinkle a little black sesame to make the dish more appealing and attractive.
