What is tapioca flour?

Tapioca flour is a flour made from cassava root, with a round grain shape and opaque white color. When cooked, the flour turns translucent white and has a chewy texture. Tapioca flour is often used to make desserts, cakes,… or to add thickness and binding to dishes.

Distinguishing between jelly powder and agar powder

  • Jelly powder is a type of powder made from agar algae belonging to the red algae group (Kappaphycus alvarezii syn. K. cottonii). It is produced by freezing the algae, then hydraulic pressing them to remove water, followed by drying and finally grinding into a fine powder for the finished product that we commonly use.
  • Agar powder, also known as Agar jelly powder, is derived from the red algae Gracilaria or Gelidium from Japan. The algae are boiled, the water is discarded, and the remaining solid is dried and ground into a fine powder. The advantage of this type of jelly powder is that it sets quite quickly and has good binding properties.

Ingredients for the jelly cake with sago powder

How to make Tapioca Jelly Cake

  • Boil tapioca pearls

    First, boil 500ml of water, then add 50gr of tapioca pearls and boil on low heat for 15 minutes.

    Next, turn off the heat and cover the pot of tapioca pearls for another 15 minutes.

    Finally, strain the tapioca pearls through a sieve and let them drain.

    How to properly boil tapioca pearls

    • Only add tapioca pearls for boiling when the water is boiling; if the water is still cold, it will easily cause the tapioca pearls to melt.
    • When you first add the tapioca pearls to the pot, you should cook on high heat for 5 minutes, then lower the heat and cook for another 10 minutes.
    • Next, change the water in the pot; when the water boils, add the tapioca pearls and boil for about 6 minutes, then turn off the heat, cover tightly, and let the tapioca pearls sit for another 20 minutes.

  • Cook the coconut milk

    Place a new pot on the stove, add 200ml of coconut milk, 200ml of unsweetened fresh milk, and 50gr of sugar. Stir the mixture over low heat until the sugar is completely dissolved.

    Next, add 10gr of purple sweet potato powder and continue stirring until the powder dissolves.

  • Mix the sago jelly mixture

    Add 6g of agar powder into the coconut milk mixture and stir well until the agar dissolves completely.

    Tip: Stir continuously and evenly to ensure the agar dissolves completely; otherwise, it will clump together, resulting in an unsatisfactory product.

    Next, add the cooked sago and continue to stir until the mixture comes to a boil, then turn off the heat.

    Pour the sago jelly mixture into the mold, then let it cool at room temperature for 1 – 2 hours until the jelly sets.

    Once the jelly has set, place it in the fridge and enjoy gradually.
