  • About appearance: You should choose those with smooth skin and a body that is not bloated.
  • About eye color: Choose octopus with clear, bright, and shiny eyes.
  • About skin color: Choose those with a back that has a brown-gray color with a blue sheen, and a white belly.
  • About the body: Choose octopus with a firm body; when pressed, it should not feel soft and watery.
  • You should avoid buying those with cloudy eyes, dull color, and an off-white belly as they are octopus that has been stored for too long or soaked in fresh water to increase weight.

How to make Korean Kimchi Octopus Hot Pot

  • Prepare the octopus

    After purchasing the octopus, rinse it briefly with water. Then, place the octopus in a large bowl with 1 teaspoon of salt diluted in water and rub it to remove any dirt from the octopus’s tentacles.

    Turn the octopus over, gently squeeze the round hole to remove the beak. Next, use scissors to remove the eyes and internal organs of the octopus. Rinse it clean with several changes of water.

    Put a pot of water on the stove to boil, when the water boils, add the prepared octopus and blanch for about 2 minutes, then transfer it to a bowl of ice water to soak for 10 minutes, then take it out to drain.

    • To eliminate the fishy smell of the octopus, cut off the eyes, ink sac, and internal organs, then rinse thoroughly with clean water.
    • Rub the octopus with a mixture of salt, ginger, or vinegar, then rinse with several changes of water.

    Marinate the octopus with 1 tablespoon of chili powder, 1 tablespoon of sugar, 2 tablespoons of soy sauce, and 1 tablespoon of Korean chili paste, then marinate in the refrigerator for 30 minutes.

  • Cooking Hot Pot

    Place the pot on the stove over medium heat, add 1 tablespoon of cooking oil and heat it up. When the oil is hot, add the kimchi and stir well with chopsticks.

    Next, add 500ml of chicken broth along with 1 tablespoon of chili powder, 2 tablespoons of Korean chili sauce, 3 tablespoons of fish sauce, and 1 tablespoon of minced garlic, then stir well with a spoon. Boil over high heat for about 10 minutes until the water boils, then season to taste and turn off the heat.
