How to choose delicious whole chicken
- For this dish, you should choose to buy free-range chicken to get firm and tasty meat.
- Good chicken will have a compact, firm body and a small breast.
- The chicken skin should be shiny yellow, with some areas darker yellow like the wings, breast, and back, and should not have any bruises or black spots.
- If the chicken skin is tough, uniformly shiny yellow, but the fat is white, it indicates the chicken has been treated with chemicals.
- Press the meat to check; if it is firm and elastic, it is good chicken. If the meat is mushy, slippery, deformed, or has indentations, do not buy it to avoid health risks.
- Do not choose chicken that has a sour smell or bad odor.
- For frozen chicken from supermarkets, check the reputable source of origin and the expiration date on the packaging to ensure quality.
How to clean chicken without odor
- To prevent odor, you need to remove all the feathers, including fine feathers, to make the chicken clean and less smelly.
- Mix vinegar and salt in a ratio of 2 salt to 1 vinegar, then apply it all over the chicken, rubbing multiple times and then wash thoroughly with clean water.
- Rub a few slices of lemon with a little salt on the chicken meat. Crush a piece of ginger and a little white wine, massage it onto the chicken and let it rest for 30 minutes before cooking.
How to prepare Baeksuk chicken

Prepare the chicken
Pluck the chicken clean, then remove all internal organs and wash several times with water to remove all dirt.
Next, use a knife or scissors to cut off the air sac and sharp bones on both sides of the chicken wings.
Finally, use scissors to make small holes in the skin underneath the chicken. Then tuck the chicken legs into the two holes to secure them in an X shape.

Cook the chicken
Place a pot on the stove, add 1 liter of filtered water, the prepared chicken, 3 jujube fruits, 3g of whole peppercorns, 5 cloves of garlic, and 30g of green onions. Cook the chicken over medium heat for 40 minutes.

Cook Chicken Porridge
Place a new pot on the stove, add 1 tablespoon of perilla oil, 190g of soaked glutinous rice, and stir-fry for about 1 minute over medium heat.
Then, add a little chicken broth and cook until the glutinous rice thickens.

Make Kimchi
Cut 200g of green onions into pieces about 5 – 7cm long.
In a large bowl, add 135g of salt, 2 liters of water, and 1/2 napa cabbage cut into bite-sized pieces. Use your hands to mix well so that the cabbage absorbs the saltwater, then soak for 1 hour.
In a new bowl, combine 100g of Korean chili powder, 120ml of apricot water, 120ml of anchovy fish sauce, 70g of minced garlic, and 1 tablespoon of minced ginger, then mix well.
Squeeze the excess water from the napa cabbage, then mix it evenly with 1/2 of the chili mixture.
Finally, add the cut green onions, mix well one more time to complete.

Serve a bowl of porridge sprinkled with a little black sesame, a bowl of chicken with broth, a bowl of kimchi, a bit of fresh green chili, and chili sauce.
