How to choose fresh white shrimp
- You should choose shrimp that have intact heads and bodies, plump, and feel firm to the touch.
- Shrimp should have a natural fishy smell. The color should be uniform and there should be no strange odors.
- Check the width between the joints of the shrimp. If the joints are narrow, the shrimp are fresh and good. If the joints are wide, it indicates the shrimp are not fresh due to being stored too long or kept in the freezer for an extended period.
- You should also avoid buying shrimp that are slimy, as they may be sick or have been stored for a long time.

Where to buy soju and rice syrup?
- You can buy soju and rice syrup at supermarkets, e-commerce sites, or specialty stores that distribute Korean food with prices ranging from 60,000 VND – 100,000 VND/360ml for soju and 60,000 VND – 100,000 VND/500ml for rice syrup (prices updated on December 24, 2020).
- When purchasing, be sure to check the expiration date and labels printed on the products to ensure quality!

How to prepare Korean-style marinated shrimp

Prepare the ingredients
After buying, you cut off the antennae, head, and tail of the shrimp. Then rinse the shrimp thoroughly and use a toothpick to remove the vein on the back of the shrimp.
Wash the green onion and onion, drain, and cut into pieces about 1/2 finger length.
Wash the fresh ginger, drain, and slice thinly about 1/4 finger length.
Tip: After deveining, you can soak the shrimp in 200ml of white alcohol for about 30 – 40 minutes to clean and eliminate the fishy smell of the shrimp. -
Make the sauce
Bring to a boil a mixture of 300ml soy sauce, 600ml water, 200ml soju, 20ml rice syrup, 3 stalks of chopped green onions, 1/2 onion chopped, 1 sliced ginger root, 3 tablespoons of white sugar, 1/2 teaspoon of salt, and 5 cloves of garlic, then let it cool.

Soak the shrimp
Put 5 sliced garlic cloves, 5 chopped red chili peppers, 5 chopped green chili peppers, and the remaining chopped onion into a glass jar, then add the prepared shrimp on top.
Slowly pour the cooled sauce over the shrimp until they are submerged, cover the jar, and place it in the refrigerator for about 2 – 3 days before enjoying.
