Salmon 500 gr Onion 1/2 bulb Green onion 1 stalk Ginger 1 piece Garlic 11 cloves Green chili 2 pieces Red chili 2 pieces Yellow lemon 1 piece Mirin 120 ml Kikkoman soy sauce 200 ml (or thick soy sauce) Sugar 3 tablespoons Whole pepper 1 tablespoon

How to prepare Salmon soaked in soy sauce

  • Prepare the ingredients

    Wash the salmon with 20ml of mirin, then remove the skin, cut into bite-sized pieces about 1/2 finger thickness, and place in the refrigerator refrigerator until marinated.

    Peel the onion and cut it into wedges or slices. Peel the ginger and crush it.

    Wash the green onion and cut into pieces about 2 fingers long. Peel the garlic and crush it.

    Wash the lemon, drain it, and cut into rounds. Cut the stems off the green and red peppers, then slice them.

  • Cook the soy sauce

    Place a pot on the stove over medium heat, add 250ml of filtered water, 200ml of soy sauce (about 1 cup), 3 tablespoons of sugar, and 100ml of mirin and bring to a boil.

    When the soy sauce mixture boils, add 1 stalk of green onion, 1/2 onion, 5 cloves of garlic, 1 piece of ginger, 1 tablespoon of peppercorns, 1 green chili, and 1 red chili sliced.

    Then reduce the heat and let it simmer for another 15 minutes, season to taste, and turn off the heat to cool down, then strain through a sieve to collect the liquid.

  • Marinated Salmon

    Prepare a container with a lid ready, if possible use a glass container as it’s better, briefly rinse the container with hot water and let it cool, then wipe it clean and arrange sliced lemon, salmon, 6 cloves of garlic, and add the remaining green and red chili.

    Then pour the soy sauce over the salmon, cover it, and place it in the refrigerator for 5 – 7 hours before enjoying!

    When serving, arrange the cut salmon pieces on a bowl of hot rice, add a little mustard if you like it spicy.

  • Prepare the Ingredients

    Wash the salmon fillet, remove the skin, and cut it into bite-sized pieces, and drain.

    In a small pot, add 150ml of concentrated Maggi soy sauce, 70ml of filtered water, and 2 tablespoons of sugar, place the pot on the stove, turn on low heat, stirring until the sugar completely dissolves, then turn off the heat and let it cool.

    Peel the onion, rinse with water, then cut into wedges. Peel the garlic and red onion, rinse and slice.

    Scrape the ginger clean, wash it, and then cut into strips.

  • Marinate the salmon

    Prepare a glass container with a lid, evenly layer sliced onion, julienned ginger, sliced shallots, and garlic at the bottom of the container, then place the salmon pieces on top.

    Next, pour in cooled soy sauce and 150ml of white wine, place 6 green and red bird’s eye chili peppers, 5 non-spicy horn chilies, and sprinkle 10g of black pepper on top, cover the container, and store it in the refrigerator for 8 hours before use.

How to clean salmon properly, without fishy smell

  • Wash the salmon thoroughly, use ginger to crush or grind it finely and mix it with a little white wine, then massage the salmon evenly, marinate for about 5 – 10 minutes, and then rinse with water. After that, pat the salmon dry.
  • Using lemon: squeeze fresh lemon to extract the juice, mix the freshly squeezed lemon juice with filtered water and add a little salt. Soak the salmon in this mixture, flipping it over, then rinse with water.
  • Using fresh milk: pour fresh milk into a large bowl, add the salmon, ensuring the milk covers the fish. Soak for about 3 – 5 minutes, then rinse; the fish will no longer have a fishy smell.
