Lotus stem 300 gr Garlic 3 cloves Lime 5 fruits Green onion 1 stalk Cooking oil 1 tablespoon Fish sauce 1/3 tablespoon Common seasoning A little (salt/ monosodium glutamate/ seasoning powder)

How to choose fresh lotus stem

  • Good lotus stem is fresh, with a stem that is neither too thick nor too thin.
  • Stems with a slightly dark color or muddy are unbleached lotus stems and safe to use.
  • Avoid buying lotus stems that are pure white as they may have been bleached.
  • Do not buy stems that are mushy, bruised, rotten, and spoiled; they will feel slimy and soft when touched.

How to Prepare Stir-Fried Lotus Stem with Garlic

  • Prepare the Ingredients

    Peel the garlic, wash it clean, crush it, and then chop it finely. Remove the roots from the green onions, discard any wilted leaves, and cut them into long pieces.

    Soak the lotus stems in a mixture of lemon juice diluted with salt, cut them into pieces about the length of a finger, and split them in half.

    Wash the lotus stems thoroughly under running water several times, then drain them in a basket.

    How to Prepare Crunchy White Lotus Stems

    • Squeeze the juice from 5 lemons with a bit of salt into 1.5 liters of water, stir well, and then soak the lotus stems in this mixture for a few hours. The amount of lemon can be adjusted depending on the quantity of lotus stems you need to prepare.
    • If you have time, you can soak the lotus stems in this mixture for 22 – 24 hours at a cool temperature of 5 – 10 degrees Celsius before using them. This method is very simple, but you will achieve perfectly white and crunchy lotus stems that are delicious and appealing.

  • Sautéed Lotus Stem

    Add 1 tablespoon of cooking oil to a pan over high heat, wait for the oil to heat up, then add minced garlic to sauté until fragrant. When the garlic turns golden and releases its aroma, add the lotus stem and quickly stir-fry with 1 teaspoon of seasoning, 1 teaspoon of MSG, and 1/3 tablespoon of fish sauce.

    Once the seasonings are mixed evenly with the lotus stem, add 2 tablespoons of water to the pan, then cover and cook for another 5 minutes for the lotus stem to soften.

    After 5 minutes, open the lid to see that the lotus stem is cooked, add chopped green onions and stir gently for another minute, adjust the seasoning to taste, then turn off the heat.
