Pork ears 2 pieces Fresh coconut water 300 ml Garlic 3 cloves Chili 2 pieces Satay 1 tablespoon Five-spice powder 1 teaspoon Fish sauce 1 tablespoon Soy sauce 2 teaspoons Cooking oil 4 tablespoons Common spices a little (salt/sugar/seasoning powder)

How to Choose Good Quality Pork Ears

  • For pork ears, you should choose those that are of moderate size, not too large, clean, have a light pink color, heavy weight, and not too much fat.
  • It is advisable to buy pork ears from young pigs, cleaned by the seller, with intact skin, no unpleasant odor, or bruises.
  • Avoid choosing pork ears that are too large, wrinkled skin, not intact, showing bruises, pale color, and unpleasant smell.

How to make Braised Pig Ears in Coconut Water

  • Prepare the pig ears

    When you buy pig ears, to reduce the smell, wash them with diluted salt water about 2 to 3 times, then rinse thoroughly with clean water, and place them in a basket to drain.

    Tips for cleaning pig ears, avoiding bad smells:

    • Method 1: Scrape off all hair and dirt stuck to the pig ears, then rub with salt and lemon, and rinse several times with water to drain.
    • Method 2: Soak in rice washing water, and rinse several times under clean running water.
    • Method 3: Use a few slices of ginger and vinegar to rub directly and wash the pig ears thoroughly, then rinse with clean water to finish.

  • Marinate the pig’s ears

    Peel the garlic, remove the stems from the chilies, wash them clean and then chop them finely.

    Using a bowl, add the mixed ingredients including: 1/2 of the garlic, the chopped chilies, 1 teaspoon of five-spice powder, 1 tablespoon of fish sauce, 2 spoons of soy sauce, 1 tablespoon of sugar, 2 teaspoons of seasoning powder, 1/2 teaspoon of salt, and 1 tablespoon of satay, mix well to dissolve the seasonings.

    Then put all the above mixture into the pre-prepared pig’s ears and marinate for about 20 – 30 minutes for the pig’s ears to absorb the flavors.

    Pour 4 tablespoons of cooking oil into the pan and heat over medium heat. Wait for the oil to get hot, then add all the remaining minced garlic and chili into the pan. Use chopsticks to stir until the mixture of garlic and chili is golden and fragrant, then add the marinated pig’s ears into the pan and stir well.

    After the pig’s ears firm up, add 300ml of fresh coconut water and cook over low heat until the sauce thickens, meaning the pig’s ears are cooked and infused with flavor. Adjust the seasoning one last time to see if it’s to your taste, then turn off the stove.
