How to choose fresh ingredients
How to choose good pork fat:
- Choose whole pork fat, with no lean meat and pig skin for this dish.
- Choose fat that is opaque white, has good elasticity, with no signs of being slimy or yellowing, and has no unusual fishy smell.
- You should choose firm fat; the fat will be crispy after frying or grilling, not tough and chewy. Additionally, the rendered fat will be richer and more fragrant.
How to choose fresh betel leaves
- Good betel leaves are medium-sized, evenly large, thick leaves, and dark green; choose those that are intact and not torn.
- Avoid leaves that are too dark green, looking withered, and feel hard and brittle, as these are old leaves.
- Avoid overly young leaves that are pale green; these leaves are still immature and lack the strong flavor of betel leaves.
How to choose fresh beef
- Fresh beef always has a red color with white streaks mixed in, while the fat is bright yellow. The meat fibers are small and not overly fine.
- When pressed, the meat feels firm, not mushy, and has good elasticity.
- Avoid meat that has turned pale green or dark red, with dark yellow fat, especially if there are tiny spots on the surface and feels slimy when touched.
- Additionally, avoid meat with a strong unpleasant odor, as this indicates it has been stored for too long.
- If you buy minced beef, you should choose whole pieces of meat first and ask the seller to grind it for you, or take it home to chop it, or use a meat grinder to chop it small.
How to make Grilled Beef Wrapped in Betel Leaf using an air fryer

Prepare the betel leaves and scallions
After buying the betel leaves, wash them clean and let them drain for about 30 minutes. Choose 3 – 4 of the smallest betel leaves, cut off the stems, then chop them finely.
Peel the garlic and wash it clean. Wash the lemongrass, then finely chop the garlic and lemongrass and place them on a plate.

Make the marinade sauce for the beef
Add 1 tablespoon of fish sauce, 0.5 tablespoon of honey, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and 1 tablespoon of chili sauce into a bowl. Then stir well to combine the mixture.
Place a pan on the stove, add a little annatto oil to the pan. When the oil is hot, add the garlic and lemongrass and sauté until fragrant and golden. When the lemongrass and garlic are golden and aromatic, pour the prepared fish sauce mixture into the pan and cook over medium-low heat.
Use a plate to stir the mixture, add 30g of butter (salted or unsalted is fine), a little toasted sesame, and a little chili powder to the sauce mixture. Stir again, and when the mixture boils, turn off the heat.

Marinate and mix the meat
Wash the fatty meat, pork, and beef with diluted saltwater and then rinse with clean water again. After that, let the meat drain on a colander.
Dice the fatty meat into small cubes. Cut the pork and beef into moderate pieces so they can be put into the meat grinder.
Put the beef and pork into the grinder and blend the mixture until smooth. Transfer the blended meat to a bowl, add the diced fatty meat and chopped betel leaves. Mix well for the mixture to combine. Put this mixture back into the grinder and blend at the lowest speed to make the meat sticky and cohesive.
After the meat mixture is well combined, add 2 tablespoons of the prepared marinade. Turn on the machine and blend the mixture for about 2 minutes to evenly mix the seasoning into the meat. Transfer the meat to a container and marinate for 2 – 3 hours in the refrigerator.

Roll the beef
Lay the betel leaves on a clean cutting board, scoop 1 small spoon of meat and place it on the rough side of the leaf. Fold the edges on both sides and then gradually roll it up into a betel leaf roll. To secure the meat roll, you can use a bamboo toothpick or use the leaf to pin it so it doesn’t come undone.
Do the same with the remaining betel leaves until finished.
Tip: If you use bamboo sticks to secure the rolls, you need to soak the sticks in water for 30 minutes to prevent them from burning when grilling. -
Grill the beef
Turn on the highest temperature of the machine for 5 minutes to preheat it. Place the rolls evenly in the air fryer, brush a thin layer of oil on the surface of the leaves, and grill for the first time at 180 degrees Celsius for 5 minutes. After 5 minutes, turn the rolls over, brush on another thin layer of oil, and grill at 180 degrees Celsius for another 5 minutes.
