  • Boil lotus seeds

    Wash the lotus seeds thoroughly, then boil them with a little salt until soft, then take them out. The lotus water is used to cook the rice.

    • Prepare the ingredients

      First, take 20g of dried shiitake mushrooms and soak them in warm water for about 7 – 10 minutes until they expand, then remove them. After that, squeeze out the water and cut them into small strips.

      Next, peel the carrot, wash it thoroughly, and cut it into small cubes. For the corn, separate the kernels from the cob.

      Then, take 20g of dried lotus seeds that have been soaked and softened overnight to remove the lotus heart, while also peeling off the brown membrane.

      For the green beans, trim both ends and strip the fibers, then wash them thoroughly and cut them into small cubes.

      After that, boil about 300ml of water and add the prepared lotus seeds to cook over medium heat. When the water boils again, lower the heat and simmer for another 10 minutes until the lotus seeds are soft, then remove them.

    • Steaming the rice

      First, place a pan on the stove and add 1 tablespoon of cooking oil to it. Wait for the oil to heat up, then add 1 tablespoon of minced dried onion to sauté until fragrant.

      Next, add the green beans, carrots, sweet corn, and shiitake mushrooms that have been prepared and sauté them evenly for about 2 minutes until the mixture is just cooked, then season with about 1 teaspoon of salt and 1/3 teaspoon of monosodium glutamate.

      Then, add 1 bowl (rice bowl size) of cooled rice and stir evenly. After that, add 3 tablespoons of soy sauce and mix all the ingredients together over high heat for about 30 seconds, then you can taste and adjust the seasoning before turning off the heat.

      After washing and drying the lotus leaves, place them in a bowl with the vein side facing inside. Next, add the lotus seeds first, then spread the rice evenly on top. After that, gather the lotus leaves and use a toothpick to secure them.

      Finally, place a pot on the stove, add 1 bowl of water, then place the rice package in the steaming basket and cover it. Steam for about 10 minutes until the rice is soft and fragrant, then remove it from the pot.
