How to make lotus seed milk with a slow juicer

  • Prepare the lotus seeds

    After purchasing lotus seeds, you need to process them by washing them thoroughly, then separating the lotus seed hearts from the seeds to remove the bitter part.

    Next, soak the lotus seeds that have been separated from their hearts in warm water for about 2 – 3 hours to allow them to swell evenly and become softer.

    First, you put the soaked lotus seeds into a bowl and add about 500 ml of water.

    Next, you need to prepare a slow juicer, then slowly scoop each spoonful of lotus seeds from the bowl into the machine and start juicing the lotus seeds until finished.

    Then, you reuse the pressed lotus pulp and continue adding the remaining water from the bowl from the first juicing to press for the second time.

    After finishing the second juicing, we continue to add 250 ml of water to the pulp and stir well to press again for the third time, and this is the final time we mix water with the lotus pulp to juice in the slow juicer.

    Then, we pour all the juiced water into a pot, proceed to remove the foam floating on the surface of the water, and filter the milk through a sieve to eliminate any remaining residue from the previous juicings and begin the next step to cook the lotus milk.

  • Cooking Lotus Seed Milk

    Bring all the milk mixture in the pot to a boil over low heat, stirring constantly to prevent the milk from settling and burning at the bottom of the pot.

    When the milk mixture starts to boil, you should reduce the heat and continue to cook for about 3 more minutes.

    After that, add about 1/3 can of sweetened condensed milk and 100gr of white sugar to the lotus seed milk mixture and stir well to quickly dissolve the sugar.

    Finally, add about 500 ml of unsweetened fresh milk to the pot, then turn off the heat immediately.

  • Final Product

    You should let the lotus seed milk mixture cool down a bit, then pour it into a glass or bottle and store it in the refrigerator to keep the drink cool and prolong its shelf life!
