Banana 2 pieces Walnut 50 gr Cashew nuts 30 gr Pistachios 20 gr Pumpkin seeds 20 gr Chia seeds 1 tablespoon Sliced almonds 1 tablespoon White sesame seeds 1 tablespoon Black sesame seeds 1/2 tablespoon Roasted peanuts 1/2 tablespoon Dried strawberries 50 gr (Or raisins) Honey 1 teaspoon Lemon juice 1 teaspoon

How to select fresh bananas

  • You should choose bananas that are about the size of two fingers, avoiding overly large ones.
  • Pay attention to select bananas that have both green and yellow fruits in the bunch, not all uniformly ripe, as this indicates natural ripening.

How to Make Mixed Nut Cake

  • Prepare and Roast the Nuts

    Remove the shells from walnuts, pistachios, and pumpkin seeds. For walnuts, crush them into pieces, about 3 to 4 bite-sized pieces.

    Add walnuts, cashews, and pistachios to a pan and roast over medium heat for about 2-3 minutes, then add the pumpkin seeds and roast together for another minute before turning off the heat.

    Mix all the roasted nuts with 1 tablespoon of chia seeds, 1 tablespoon of sliced almonds, 1 tablespoon of white sesame seeds, 1/2 tablespoon of black sesame seeds, and 1/2 tablespoon of roasted peanuts, then stir quickly over medium heat for 10 seconds, then turn off the heat and let it cool.

    The roasted seeds combined together should weigh exactly 200 grams, add 50 grams of dried strawberries or raisins. Mix all types together.

    Add all the prepared nuts and mix them together with the bananas, add 1 tablespoon of honey and mix well.

    Place the cake in the oven and bake at 170 degrees Celsius for 15 minutes. Then turn off the oven and take the cake out, letting it cool for about 2 – 3 minutes before flipping it over.

    Put it back in the oven for another 5 minutes, then turn off the oven and crack the oven door to allow the cake to cool slowly; this will make the cake crispier and tastier.
