How to choose good Cat mangoes
- Mango skin: for ripe mangoes, choose those that are uniformly yellow near the stem, with a firm stem, taut skin, not soft, with the stem slightly indented into the flesh, and tiny black seeds on top.
- firmness: A ripe mango should have a certain firmness when pressed, not mushy, and feel solid in hand.
- Aroma: When ripe, mangoes will have a gentle fragrant aroma.
Note:
- You should choose Cat Chu mangoes because they have a fragrant aroma and a lot of sweet flesh, which enhances the mango flavor of the drink.
- If you don’t have espresso coffee, you can use pure brewed black coffee to make the drink.

How to make Mango Coffee

Prepare the mango
Wash the mango, peel it, cut it into pieces, and put it into a blender.

Blend the mango mixture
Add about 50ml of syrup and 100ml of water into the blender. Blend the mixture until it becomes smooth, then turn off the blender.
Note: you can add more sugar according to your preference.

Froth the milk
Add about 100 – 150ml of whole milk depending on your preference into the milk frothing pitcher. Froth up and down evenly for about 1 – 2 minutes until the foam is full.
To prepare the milk foam, pour the frothed milk into a jug, gently tap the bottom of the jug on the table, and shake lightly in a clockwise direction to eliminate large bubbles.
Tip: you can use a frother to achieve a fluffier and creamier foam

Completion
Gently stir the blended mango in the blender, pour about 1/2 cup. Add a thin layer of crushed ice on top to separate the coffee and mango.
Pour about 30 – 50ml of espresso into the cup depending on how bitter you want it. Use a small spoon to slowly pour the coffee over the spoon so that it flows evenly into the mango coffee.
Shake gently and tap the milk container once more. Then use a spoon to slowly scoop the milk foam into the cup.
