Ingredients for Marinated Chicken Feet For 4 people

Chicken feet 500 gr Horn chili 1/2 fruit Shallots 3 bulbs (sliced) Garlic 3 cloves (sliced) Lemongrass 1 stalk Filtered water 100 ml Ice cubes A little White wine 1 teaspoon Fish sauce 200 ml Sugar 150 gr Salt 1 teaspoon

How to choose fresh and delicious chicken feet

  • First, when choosing chicken feet, you should observe the external color; fresh chicken feet will have a pinkish-white color, and the flesh and bones still have a bright red color.
  • Next, you should choose chicken feet that have toes curved and facing inward, skin slightly wrinkled, and when pressed lightly, the chicken feet should have some elasticity and feel slightly sticky.
  • Avoid choosing chicken feet that are large, plump, and uniform in size, as these are often feet that have been injected with water. Additionally, do not choose chicken feet that have dark bruises or are slimy, as this is a sign that the chicken feet have been stored for too long or are spoiled.

How to Prepare Marinated Chicken Feet

  • Prepare the chicken feet

    Cut off all the claws from the chicken feet, then soak them in diluted salt water for 5 – 7 minutes, then rinse with clean water and drain.

    Depending on your preference, you can cut the chicken feet in half and place them in a bowl or leave them whole!

  • Boil the chicken feet

    Add about 500ml of water and 1 teaspoon of salt into a pot, then place it on the stove. Smash a stalk of lemongrass and add it to the pot of water, then boil over high heat.

    When the water boils, add the chicken feet to the pot to cook. After about 15 minutes of boiling, add 1 teaspoon of white wine to eliminate the smell of the chicken feet, then turn off the heat.

    Note: While boiling the chicken feet, remember to skim off the foam regularly!

    Prepare a bowl of ice water to soak the chicken feet; this will help make the chicken feet crispy, chewy, and much more delicious.

  • Make the fish sauce mixture

    While soaking the chicken feet, we will prepare the fish sauce for soaking. Place a pot on the stove, add 200ml of fish sauce and 150g of sugar to the pot, and simmer on low heat for about 10 minutes until the sugar completely dissolves.

    After the sugar has dissolved, add 100ml of filtered water to the fish sauce mixture and stir well, then heat until the fish sauce is just simmering, then turn off the heat and let it cool.

  • Soak chicken feet in fish sauce

    Prepare a clean and dry glass jar. Next, sequentially add the chicken feet, shallots, garlic, and chili into the jar.

    Finally, scoop the cooled fish sauce mixture into the jar so that the fish sauce fully covers the chicken feet, allowing them to soak evenly in the seasoning.

    Seal the lid tightly and place it in the refrigerator for about 2 hours, and then it will be ready to enjoy.

Tips for preserving chicken feet soaked in lemongrass and calamondin

  • First, to ensure that the soaked chicken feet can be preserved for a longer time, you should blanch the utensils like jars, spoons,… in boiling water and let them dry or wipe them thoroughly with a clean cloth.
  • Next, chicken feet should be stored in the refrigerator’s cool compartment and tightly covered, which will prevent bacteria from entering and prolong their freshness.
  • Finally, when eating chicken feet, you should use clean chopsticks or spoons to take out a small portion and then put the remaining part back into the refrigerator, as leaving the chicken feet at room temperature for too long will cause them to sour more quickly!
