Each spoonful of cold, creamy, fragrant ice cream, crunchy jelly, chewy mochi, paired with sweet red beans promises to bring you an amazing snack. Ingredients for Matcha Red Bean Bingsu Serves 4

Crunchy jelly powder 3 gr (agar powder) Green tea powder 15 gr Glutinous rice flour 70 gr Red beans 100 gr Honey 90 ml Green tea ice cream 4 pieces (scoops) Vanilla extract 2 teaspoons Sugar 100 gr Water 1.03 liters

Tip: You should use Japanese matcha powder to enhance the authentic aroma of green tea in your product.

How to choose good quality red beans

  • You should choose beans that are bright red, not infested with pests, and without signs of mold or unpleasant odors.
  • You should choose beans of moderate size so that after cooking, the beans achieve a soft texture and delicious nutty flavor.
  • Avoid choosing overly large beans, as these are often not tasty, contain fewer nutrients than smaller beans, and especially tend to have a slight astringent taste when eaten.

How to make Matcha green tea red bean Bingsu

  • Make green tea jelly

    Add 3g of jelly powder and 300ml of water into a bowl, stir the mixture well, and soak for 15 minutes.

    After 15 minutes, add the jelly mixture to a pot along with 30g of sugar and stir well over low heat until the sugar dissolves.

    Dissolve 5g of matcha powder in 15ml of water, then pour it into the jelly pot and mix well.

  • Pour the green tea jelly into molds

    When the green tea jelly mixture boils, turn off the heat and pour it into the molds, let it cool and refrigerate for 30 minutes.

    When the jelly has set, cut it into small square pieces for serving.

  • Knead the mochi dough

    Add 70g of glutinous rice flour into a bowl, then gradually pour in water until the dough forms a smooth and sticky mass.

  • Shape and cook the mochi

    Divide the mochi dough into small portions and roll them into balls.

    Boil a pot of water and cook the mochi balls for 20 minutes. Then, remove the mochi to a bowl of cold water to cool.

    Tip to tell if the mochi is cooked: The uncooked mochi will sink to the bottom of the pot, but when the mochi is cooked, it will float to the surface, and the dough will also appear clearer.

    Place a new pot on the stove, add 100ml of water, 15g of sugar, and 1 teaspoon of vanilla extract, then stir well over medium heat until the sugar dissolves.

    After that, add the mochi into the pot and cook for 15 minutes, then let it cool until use.

  • Cook the red beans

    Soak 100g of red beans with 300ml of water for 4 hours or overnight.

    After soaking, rinse the beans well, then place them in a pot with 300ml of water. Cook the beans over medium heat for 30 minutes until they are soft and the water is reduced.

  • Making red beans with honey syrup

    Add 50g of sugar, 30ml of honey, and 1 teaspoon of vanilla extract to the pot of red beans. Mix the ingredients well and cook for 30 minutes over medium heat for the red beans to absorb the honey syrup evenly.

  • Making matcha sauce

    Add 30g of sugar and 10g of green tea to a bowl and mix well.

    Then, add 60ml of honey, 15ml of hot water, and continue to mix until the mixture is well combined.

  • Product

    Serve a bowl with some crushed ice, arrange a few pieces of green tea jelly, some red beans, and a little mochi. Finally, top it with a scoop of green tea ice cream and drizzle with matcha sauce to complete.
