  • Prepare the vegetables

    Peel the carrots, white radish, beetroot, and chayote, wash them with water, then cut them into small bite-sized pieces. After that, soak them in diluted salt water for about 5 – 10 minutes, then rinse 2 – 3 times with clean water and let them drain.

    Green onions and coriander should be trimmed, removing any spoiled parts, washed clean, and then chopped finely.

  • Marinate and shape the meatballs

    Put minced meat into a bowl, season the meat with a mixture of spices including: 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of sugar, and a little ground pepper. Then mix the meat mixture well to absorb the spices and marinate for about 5 minutes, then shape into bite-sized balls.

    Put 2.5 liters of water into a pot, bring to a boil over high heat, when the water is boiling, add carrots, white radish, and meatballs. Wait for it to boil again, then skim off the white foam to make the water clear, and reduce the heat to medium to cook for about 10 – 15 minutes.

    When the carrots and white radish are just cooked, add the beetroot and chayote, season the soup with a mixture of spices including: 1/2 teaspoon of salt, a little monosodium glutamate, 1/2 teaspoon of sugar and stir gently to dissolve the spices.

    When the soup boils again, taste and adjust the seasoning to your liking, once the soup is done, turn off the heat, sprinkle a little ground pepper, chopped green onions, and cilantro into it to finish.
