Create the milk candy mixture
Heat a pan on the stove, then add butter to melt, followed by 240 g of marshmallow, and stir in a circular motion over low heat until the mixture melts together.
Once the mixture has blended, add the powdered milk.
Continue to stir the mixture until all the ingredients are combined.

Add nuts to the candy
Turn the heat to low and add walnuts, almonds, pumpkin seeds, raisins, dried pineapple, blueberry jam, and stir the mixture evenly before turning off the heat.
Note: The cooking time for the mixture should not exceed 7 minutes. -
Pour the candy mixture onto the tray
Then, pour the mixture onto a non-stick tray; to ensure it does not stick, you can line the tray with parchment paper before adding the candy mixture.

How to Make Nougat Candy from Egg Whites

Cook the Malt Syrup
Add sugar, water, salt, and malt syrup into a thick-bottomed pot to cook (to avoid high heat that changes the color of the malt syrup).
Stir the mixture until dissolved, then bring to a boil, reduce to low heat. Cook until the malt syrup reaches 140 degrees Celsius.
The thermometer is usually placed close to the pot, so the temperature will be 5 degrees Celsius higher than the actual temperature of the malt syrup. If the thermometer reads 140 degrees Celsius, the malt syrup is only 135 degrees Celsius. If the weather is humid, you need to increase the temperature of the malt syrup by 2-3 degrees Celsius.
If you don’t have a specialized thermometer, you can test by dropping some malt syrup into a bowl of cold water. Here’s how to identify:
- 120 degrees Celsius: Squeeze the malt syrup with your hand; it feels like squeezing singum.
- 130 degrees Celsius: Drop malt syrup into water; it forms a water droplet shape, and squeezing it still feels elastic. At this temperature, the candy will stick to your teeth when eaten.
- 140 degrees Celsius: It feels hard like a silicon bar and can be broken.

Whip the egg whites to stiff peaks
Next, you add the egg whites to a large bowl along with 10g of sugar, then use a hand mixer to whip this mixture until it reaches stiff peaks. You can determine the stiff peak stage by lifting the whisk; if the peaks stand straight up, then your egg whites have reached the stiff peak stage.

Pour the malt syrup into the whipped egg whites
When the malt syrup reaches a temperature of 140 degrees Celsius, you slowly add the malt syrup to the egg whites. And use a hand mixer to blend these two ingredients together.
After mixing the malt syrup and egg whites well, gradually add the butter and mix evenly (divide the amount of butter each time you add it).
Note: You should add the malt syrup in several batches to make it easier to mix together. It is best to heat the malt syrup while whipping the egg whites to avoid the situation where the egg whites are whipped but the malt syrup is cooled and hardened. -
Mixing milk powder and nuts
Add the milk powder and mix well with a whisk; if it feels too heavy, you can use your hands to mix. Next, add the dry nuts and quickly mix with the candy because if the candy cools down, it will lose its stickiness.
After that, line a tray with baking paper and spread the candy evenly, then place more baking paper on top and use a rolling pin to press it down tightly. When the candy cools, cut it into bite-sized pieces, wrap them in paper, and place them in a bag or airtight container.
