How to make Black Sugar Bubble Milk Tea Cake using an air fryer
-
Cook the milk tea and black sugar boba
First, add 200ml of unsweetened fresh milk to a pot along with 3 tea bags, and heat the milk and tea over low heat until the milk is warm.
Once the milk is warm, cook for an additional 15 minutes, then turn off the heat, gently press the tea bags with a spoon, and pour the milk tea through a strainer into a bowl.
-
Mix the cake batter
Separate 2 egg yolks into a large bowl, keep the egg whites in a separate bowl. Use a whisk to beat the egg yolks until smooth.
Next, add 14g of cooking oil, 36ml of milk tea, and 1/2 teaspoon of vanilla extract to the egg yolk bowl, whisking until the mixture is well combined.
Then, add 40g of cake flour to the bowl, sifting the flour to ensure it is very fine. Mix the batter for about 5 minutes until the ingredients are well blended.
-
Whip the egg whites
Put 2 egg whites into a bowl, add a little salt, and use a hand mixer at speed 1 for about 2 minutes. When the egg whites start to foam, add 1/8 teaspoon of cream of tartar.
Turn the mixer to speed 2 and continue whipping the egg whites for another 5 minutes until they are smooth and no large bubbles remain, then add 35 – 40g of sugar.
Divide the sugar into 3 portions, adding it gradually while mixing until it dissolves completely. Gradually increase the mixing speed so that the egg whites become stiff.
Whip for about 7 – 10 minutes, when the egg whites are stiff, lift the whisk, and if the egg whites form a sharp peak that stands upright, it’s done.
Tip: If you don’t have cream of tartar, you can substitute it with 1/4 teaspoon of lemon juice or vinegar to whip the egg whites.
-
Mix egg whites and cake flour
Divide the whipped egg whites into 3 parts, gradually mixing each part into the cake flour from the bottom of the bowl upwards.
Mix gently and evenly until all the egg whites are incorporated and everything blends into a smooth mixture.
Line the bottom of a 15cm diameter mold with a layer of parchment paper. Pour all the cake batter into the mold, gently shake the mold to spread the batter evenly on the surface.
-
Baking the cake
Preheat the air fryer for 10 minutes at 180 degrees Celsius.
Once the preheating time is up, place the batter mold into the air fryer basket, cover it with a sheet of aluminum foil, but do not cover it too tightly to allow space for the cake to rise.
Insert the baking tray and bake the cake at 150 degrees Celsius for 45 minutes. After the first 35 minutes, remove the aluminum foil, then continue baking for the remaining 10 minutes.
Once the baking time is over, take the cake out and let the mold cool, then remove the cake from the mold and let it cool completely.
-
Make milk tea ice cream
Put 1 egg yolk and 20g of brown sugar into a bowl, and stir well for about 2 minutes until the sugar and egg are well combined.
Next, add 10g of cornstarch and stir well for about 2 minutes, then pour in 150ml of milk tea and continue stirring for about 4 more minutes until the ingredients are blended together.
Pour the mixture into a pot and cook over medium heat, stirring continuously for about 2 minutes until it thickens, then transfer it to a bowl.
Use plastic wrap to cover the surface of the ice cream while it is still hot. Place the ice cream in the refrigerator for 30 minutes.
When the egg cream has cooled, take it out and use a mixer to whip it briefly until it becomes smooth again.
Add 100ml of whipping cream to a bowl and whip it for 5 minutes. Pour in the egg cream and mix well to combine.

Cooking dry tapioca pearls
Boil about 500ml of filtered water, when the water is boiling, add 100gr of dry tapioca pearls and cook over medium heat. Stir well to prevent the tapioca pearls from sticking together.
When the tapioca pearls rise to the surface of the water, stop stirring and cook for about 15 minutes. After 15 minutes, turn off the heat, cover the pot, and let the tapioca pearls sit for another 20 minutes.
After resting, strain the tapioca pearls through a sieve, and once they are drained, place them in a bowl. Immediately add 20gr of brown sugar to the bowl of tapioca pearls and mix well until the sugar dissolves completely.
-
Decorating the cake
Place the cake base on a plate, use a flexible acrylic sheet to wrap around the cake, and pour the milk tea cream over the top of the cake.
Gently pull the acrylic sheet up so that the milk tea cream flows and covers the cake evenly. Finally, add the black sugar tapioca pearls in the center of the cake to complete.
