How to Make Tapioca Pearls from Glutinous Rice Flour

  • Mixing the Tapioca Flour

    You gradually add 300g of tapioca flour, 20g of glutinous rice flour, 30g of pure cocoa powder, 40g of white granulated sugar into a bowl. Use a spoon to mix the ingredients thoroughly.

  • Kneading the Dough

    Next, you slowly add 260ml of boiling water into the flour mixture, then use the spoon to mix for about 3 minutes until the water cools down enough for you to knead the dough by hand.

    After that, transfer the dough onto a cutting board and knead it like bread dough until it is smooth, elastic, and not sticky to your hands.

  • Shaping the Balls

    You divide the dough into small round balls. Then, roll the dough into a long shape, cut it into small pieces with a knife, and roll each piece into a ball.

    To prevent the tapioca pearls from sticking together, you should prepare a bowl and add a little tapioca flour into it. Once you finish shaping a ball, place it immediately into the bowl of flour.

  • Boiling tapioca pearls

    First, you put a pot of water on the stove and bring it to a boil. When the water boils, add all the tapioca pearls and use a spoon to stir so that the pearls do not stick to the bottom of the pot.

    Then, cover the pot, and when the water boils again, open the lid and stir once more, then continue to cover it. During the boiling process, keep the heat high and monitor to avoid overflowing. Just boil for about 15 minutes, then turn off the heat and let it rest on the stove for another 15 minutes. If you boil over medium heat and keep the lid open, boil for 30 minutes and rest for 15 minutes.

    Tip:
    • You should only boil as much as you will eat, especially when the tapioca pearls have been frozen; they should only be boiled once.
    • To reduce the stickiness of the tapioca pearls, after resting on the stove, you must take them out and rinse them in a bowl of clean water.

    Then, put the tapioca pearls in a bowl, add 2 teaspoons of sugar, and wait for 10 minutes for the sugar to absorb into the pearls before taking them out to drink with milk tea (the sugar helps the pearls become sweeter and prevents them from swelling when stored in the refrigerator).

    Note: To prevent the tapioca pearls from becoming chewy when encountering cold ice, you should not soak the pearls in cold water for too long; just rinse them briefly to reduce stickiness.

Black tea 1 teaspoon Coffee powder 2 teaspoons Unsweetened milk 150 ml (or sweetened) Black tapioca pearls A little Ice water 50 gr

What is black tea?

  • Black tea is made from the young buds of the green tea plant that are withered, then undergo an oxidation process by rolling the tea leaves and fermenting them at a temperature of 24 – 26 degrees Celsius and an air humidity of 95 – 98%.
  • It is called black tea because when brewed, the tea has a reddish pink or dark reddish brown color. Black tea has a fragrant, slightly astringent taste and is often used to make various beverages along with soaked fruits such as lychee black tea, peach black tea or used to make milk tea.

  • Steep the tea

    Boil 150ml of water, add 1 teaspoon of black tea into the teapot and pour in the boiling water. Cover and steep for about 3 – 5 minutes.

  • Brew coffee

    Add 2 teaspoons of coffee powder into the coffee maker with 100ml of water. Use a spoon to press the coffee to make it thick and smooth. Then lock the lid and brew the coffee for about 10 minutes.

    Tip:
    • You can use a coffee filter to brew coffee in the usual way as well.
    • For convenience and speed, you can use instant coffee powder.

    Add black pearls into the cup, then layer with ice, brewed black tea, followed by 150ml of unsweetened (or sweetened) milk and finally the brewed coffee. Just stir well and enjoy right away.

    Tip: If you want it sweeter, stir in some sugar, condensed milk, or add a little honey!
